Large Family Instant Pot Teriyaki Chicken and Brown Rice

I’m going to show you how to make this meal for your large family table. Teriyaki Chicken and Brown Rice Recipe can feed a large number of people, you just need to know how to make it! Let’s get started. You can eat it right away but it also makes a great freezer meal for later as well! And because the rice and broccoli are added in with everything else, you have the easy cleanup of a one pot meal PLUS a dairy free dinner!
What Ingredients are Used in Teriyaki Chicken and Brown Rice ?
- 5 to 6 large boneless, skinless chicken breasts, cubed
- Soy sauce or liquid aminos
- Hoisin sauce
- Rice wine vinegar
- Garlic powder or 3 cloves fresh garlic (minced)
- Carrots, peeled and cut into large chunks
- Chicken stock (or bone broth)
- Brown rice
- Fresh broccoli florets, cut into small pieces
- 2 red bell peppers, seeded and diced
- Sliced green onions, for garnish
- Sesame seeds, for garnish
How Do I Make Instant Pot Teriyaki Chicken and Brown Rice ?
Once you have all of your chicken cubed and ready to go, toss the chicken, sauces and spices, your garlic powder (or minced garlic) all together in the pot. Toss these together a few times to distribute everything evenly.
Next you’ll place your carrots and rice on top of the chicken/sauce/combination. Pour your chicken stock (or bone broth) over the entire meal, and place the Instant Pot lid on top. Make certain to lock it into the “sealed” position. Program your electric pressure cooker to “pressure cook”, or “manual” for 5 minutes.
Now the rest of the work is all left up to your pressure cooker! Once the cycle is complete, you’ll let it sit for another 5 minutes and then release the valve for a “quick release”. (This part always sends the kids running to watch!)
Once you remove the lid, add the peppers and broccoli to the pot, then gently stir the meal together. Replace your lid and set your cooker to the “warm” setting for about 5 minutes, or until the vegetables reach your favorite amount of “done-ness”.
Go ahead and garnish, then serve it up to your family! So yummy and so simple!

5 to 6 large boneless, skinless chicken breasts, cubed
⅔ cup soy sauce or liquid aminos
⅔ cup hoisin sauce
3 tablespoons rice wine vinegar
2 ½ teaspoons garlic powder
1 pound carrots, peeled and cut into large chunks
2 cups chicken stock
2 cups brown rice
1 (12 ounce) package fresh broccoli florets, cut into small pieces
2 red bell peppers, seeded and diced
Sliced green onions, for garnish
Sesame seeds, for garnish
In the electric pressure cooker, combine the chicken, soy sauce, hoisin sauce, rice wine vinegar, and garlic powder.
Over the chicken, place the carrots and rice. Pour the chicken stock over the top.
Place the lid on the electric pressure cooker and set the valve to sealing. Program the electric pressure cooker to “pressure cook” or “manual” for 5 minutes. When the cooking cycle is complete, allow the electric pressure cooker to naturally release the pressure for 5 minutes before performing a quick release of the remaining pressure.
Carefully remove the lid and stir in the broccoli and red bell pepper. Cover and all the meal to “keep warm” for 5 minutes.
Serve topped with green onions and sesame seeds if desired.
