Ya’ll know I’m a fan of one pot meals, but this is almost a one pot low carb dessert! This one is truly one of those “oh-so-super easy” recipes that will have Momma happy because of it’s ease and nutrition, and have the kids happy because of it’s flavor and sweetness. It’s a win-win!
Can a dessert “almost” be a one bowl wonder? This is it, but done the way I like to do things–mega and lots. Because it’s so easy and quick, this crowd pleaser can be made when guests bless you with a last minute visit and you need a dessert that is super yummy, healthy, and kid friendly- but FAST! Add some keto ice cream and it’s perfect! Summer time and Fall, this will be an instant favorite classic.
With it’s low sugar content, Large Family Low Carb Apple Crisp can also be a great substitute for breakfast on days when your crowd is wanting something a bit different. Don’t forget snack time!
What Kind of Apple Should I Use?
You can actually use any apple you have on hand for this recipe- even if it’s a mix of them!
However, if you’re truly counting your carb intake, there are certain apples you might choose over others. If you or a family member is counting carbs, most apples have between 18g and 21g of net carbs per fruit depending on variety. Yellow and green apples like Golden Delicious and Granny Smith tend to be lower in carbs, with 15 and 16 grams of net carbs. The Gala and Red Delicious apple varieties have about 18 grams of net carbs. The Fuji apple variety is at the high end, with 21 grams.
If you want to help increase your fiber intake with this, just leave the skin on! Yup, that actually works and the flavor isn’t changed at all!
Granny Smith, Honey Crisp, and Golden Delicious apples are known best for their ability to remain firm during the baking process. Fuji apples are known for their sweetness and bake surprisingly well.

Large Family Low Carb Apple Crisp is a perfectly refreshing low carb dessert.So simple and your family is certain to love it.
Ingredients
12 medium apples, peeled, cored, and sliced
1 tablespoon ground cinnamon
2 tablespoons pure vanilla extract
2/3 cup golden monkfruit sweetener
4 teaspoons lemon juice
1 teaspoon xanthan gum
4 cups coarsely chopped walnuts, divided
2 cup almond flour
2/3 cup granular (classic) monkfruit sweetener
3 sticks unsalted butter, melted
Instructions

Preheat the oven to 375 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.

Place the apples into each baking dish in even amounts.

Next add to each dish: the cinnamon, vanilla extract, monkfruit sweetener, lemon juice, xanthan gum, and 2 cup walnuts( one cup per dish). Toss to combine and then spread in an even layer.

Place dishes in the oven and bake for 8 to 10 minutes.

Meanwhile, in a large mixing bowl, combine the remaining walnuts, almond flour, and ⅓ sweetener. Pour the butter over the mixture and stir until combined.

Carefully remove the baking dishes and sprinkle the topping evenly over the apples of each dish. Return baking dishes to the oven.

Bake for an additional 15 to 20 minutes or until the apples have softened and the topping is golden.
