Large Family Low Carb Chocolate Cake

Ingredients
  

  • For the cake:
  • 2 cups finely ground almond flour
  • 1 cup cocoa powder
  • 1 ¼ teaspoon salt
  • 1 teaspoon baking soda
  • 8 eggs room temperature
  • 1 cup 2 sticks unsalted butter, melted and cooled slightly
  • 1 ⅓ cups granulated monkfruit sweetener
  • 2 teaspoons vanilla extract

For the frosting:

  • 1 cup 2 sticks unsalted butter, room temperature
  • ½ cup heavy cream
  • 2 teaspoons vanilla extract
  • ½ cup cocoa powder
  • 1 cup powdered erythritol sweetener
  •  

Instructions
 

  • Preheat the oven to 325 degrees. Prepare a 9x13 baking pan with nonstick cooking spray. If making for Mega, prepare 2 9x13
  • In a medium bowl, whisk together the almond flour, cocoa powder, salt, and baking soda. Set aside.
  • In a mixing bowl, beat the eggs until frothy. 
  • To the eggs, add the melted butter, sweetener, and vanilla and beat until well blended. 
  • Add the almond flour mixture to the mixing bowl and whip until combined and fluffy.
  • Transfer the batter to the prepared dish and spread to smooth.
  • Bake for 35 to 40 minutes or until a toothpick inserted in the center returns clean.
  • Cool the cake completely in the pan on a wire cooling rack.
  • Meanwhile, prepare the frosting by beating the butter with the heavy cream and vanilla until combined. Stir together the cocoa powder and erythritol sweetener. Then add the sweetener mixture to the mixing bowl and beat to combine with the butter until thick but creamy.
  • Spread the frosting over the cake.
  • Cut the cake into 12 to 16 pieces and serve.
