It can be a challenge coming up with a delicious dessert big enough to feed a large family or feed a large crowd if you’re heading to a potluck, Sunday afternoon with the family, or a fun gathering with friends. This Large Family Low Carb Chocolate Cake tastes delicious, looks great, and is super easy to make. Your kids will love it as a family-friendly snack or easy dessert. You can also make this ahead of time so it is a great time-saver, too.

Ingredients Needed to Make the Large Family Low Carb Chocolate Cake

Not only is the Large Family Low Carb Chocolate Cake is easy to make, but there are only a few ingredients you will need to have to make it.

For the cake:

  • Almond flour
  • Cocoa powder
  • Salt
  • Baking soda
  • 8 eggs
  • Unsalted butter
  • Granulated monkfruit sweetener
  • Pure vanilla extract

For the frosting:

  • Unsalted butter
  • Heavy cream
  • Pure vanilla extract
  • Cocoa powder
  • Powdered erythritol sweetener

How To Make Low Carb Chocolate Cake

Start by preheating your oven to 325 degrees. You’ll need to prepare your 9×13 baking pan with cooking spray. While your oven is preheating, place all of your dry ingredients into a medium bowl. Use a whisk to mix thoroughly, breaking apart all clumps. This step ensures a lighter and fluffier cake outcome! Set this bowl aside for later.

Next you will mix your eggs in a mixing bowl. Mix them until they are frothy. The air in the eggs will add air into your cake! Yay science. To you eggs add the melted butter, sweetener, and vanilla. Beat this mixture until thoroughly blended.

Now take your dry ingredient bowl, and begin adding it to your mixing bowl. You want to keep it all mixed well. Blend until it is fluffy again. Next transfer your batter into your prepared baking sheet and spread to smooth it in the pan.

Once your cake is completely done (toothpick inserted in middle comes out clean), cool it in the pan on a wire rack.

While your cake is cooling completely, it’s time to prepare your frosting! In a large bowl beat together your butter, heavy cream and the vanilla until combined well and smooth. In a separate bowl, whisk together the cocoa powder and erythritol sweetener. Gently pour this dry ingredient bowl into the butter/cream/vanilla mixture. Beat with electric mixer until thick and creamy.

Now you get to spread that chocolatey frosting over your cooled cake, and eat it!

Here is a way to double the recipe so that you can make enough for your large family to have for days or make one cake now and freeze one for later! For a truly Mega and Large Low Carb Chocolate Cake recipe, I have made you an extra shopping and ingredient list below to help save you even more time in the kitchen. While you will still follow the original directions when making the cake, the only change you’ll need to do first is to prepare one extra 9×13 pan before you begin. This mega recipe that I have below will serve 24 to 32.

For the cake:

  • 2 1/2 teaspoon salt
  • 2 cup cocoa powder
  • 4 cups finely ground almond flour
  • 2 teaspoon baking soda
  • 16 eggs, room temperature
  • 2 cup (4 sticks) unsalted butter, melted and cooled slightly
  • 2 2/3 cups granulated monkfruit sweetener
  • 4 teaspoons vanilla extract

For the frosting:

  • 2 cup (4 sticks) unsalted butter, room temperature
  • 1 cup heavy cream
  • 4 teaspoons vanilla extract
  • 1 cup cocoa powder
  • 2 cup powdered erythritol sweetener

Ingredients

For the cake: 

2  cups finely ground almond flour

1 cup cocoa powder

1 ¼ teaspoon salt

1 teaspoon baking soda

8  eggs, room temperature

1 cup (2 sticks) unsalted butter, melted and cooled slightly

1 ⅓  cups granulated monkfruit sweetener

2  teaspoons vanilla extract

 

For the frosting:

1 cup (2 sticks) unsalted butter, room temperature

½  cup heavy cream

2  teaspoons vanilla extract

½  cup cocoa powder

1 cup powdered erythritol sweetener

 


Instructions

  1. Preheat the oven to 325 degrees. Prepare a 9×13 baking pan with nonstick cooking spray. If making for Mega, prepare 2 9×13

  2. In a medium bowl, whisk together the almond flour, cocoa powder, salt, and baking soda. Set aside.

  3. In a mixing bowl, beat the eggs until frothy. 

  4. To the eggs, add the melted butter, sweetener, and vanilla and beat until well blended. 

  5. Add the almond flour mixture to the mixing bowl and whip until combined and fluffy.

  6. Transfer the batter to the prepared dish and spread to smooth.

  7. Bake for 35 to 40 minutes or until a toothpick inserted in the center returns clean.

  8. Cool the cake completely in the pan on a wire cooling rack.

  9. Meanwhile, prepare the frosting by beating the butter with the heavy cream and vanilla until combined. Stir together the cocoa powder and erythritol sweetener. Then add the sweetener mixture to the mixing bowl and beat to combine with the butter until thick but creamy.

  10. Spread the frosting over the cake.

  11. Cut the cake into 12 to 16 pieces and serve.
