This Low Carb Philly Cheesesteak Casserole is just as easy to make and freeze as it is tasty. You brown the ground beef, soften up the vegetables, then mix it up together. Cover with cheese. Everything tastes better with cheese, am I right? Bake for 25- 30 minutes or until cheese is brown and bubbly. I like to serve mine with a ton of squash & zucchini on the side – yum!

LARGE FAMILY LOW CARB Philly Cheesesteak Casserole

Make several pans of this low carb casserole for your family and freezer. Your family will love the taste! This large family recipe makes two 9×13 pans. 
Prep Time 15 minutes
Cook Time 30 minutes

Ingredients
  

  • 4 pounds ground chuck browned and drained
  • 1 tablespoon olive oil optional
  • 4 bell peppers seeded and sliced
  • 2 large onions sliced
  • 2 8 ounce each package cream cheese, room temperature
  • 1 tablespoon garlic powder
  • Salt and pepper to taste
  • 24 slices provolone cheese or even pepper jack cheese!

Instructions
 

  •  
  • Preheat oven to 350 degrees. Prepare a two 9×13 casserole dishes with non-stick cooking spray.
  • In a large skillet, brown ground beef over medium-high heat and chop into crumbles. Drain ground beef and remove grease from skillet (if desired).
  • If grease is removed from skillet, add olive oil and swirl to coat. Add onions and peppers to skillet, cooking over medium-high heat and stirring occasionally until softened. Remove from heat.
  • To the skillet, add cooked ground beef, cream cheese, garlic powder, salt and pepper. Stir to combine. Transfer to casserole dish.(Sometimes I mix everything together in a pot for more stirring room)
  • Top casserole with sliced provolone cheese.
  • Bake for 25 to 30 minutes or until cheese is melted and bubbling.

Notes

If freezing, stop at step 5 and wrap. Unthaw 24 hours then bake as directed.
