LOW CARB Philly Cheesesteak Casserole

Mama going on a diet can cause a family to revolt. That is until you make this amazing Low Carb Philly Cheesesteak Casserole. They will ask for seconds and thirds and, in the case of teenagers, fourths. Being low carb doesn’t have to be a bad word.

This Low Carb Philly Cheesesteak Casserole is just as easy to make and freeze as it is tasty. You brown the ground beef, soften up the vegetables, then mix it up together. Cover with cheese. Everything tastes better with cheese, am I right? Bake for 25- 30 minutes or until cheese is brown and bubbly.

Description

Make several pans of this low carb casserole for your freezer. Your family will love the taste while not missing the carbs.


Ingredients

  • 2 pounds ground chuck, browned and drained
  • 1 tablespoon olive oil, optional
  • 2 bell peppers, seeded and sliced
  • 1 large or 2 small onion, seeded and sliced
  • 1 (8 ounce) package cream cheese, room temperature
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • 12 slices provolone cheese

Instructions

 

  1. Preheat oven to 350 degrees. Prepare a 9×13 casserole dish with non-stick cooking spray.

  2. In a large skillet, brown ground beef over medium-high heat and chop into crumbles. Drain ground beef and remove grease from skillet (if desired).

  3. If grease is removed from skillet, add olive oil and swirl to coat. Add onions and peppers to skillet, cooking over medium-high heat and stirring occasionally until softened. Remove from heat.

  4. To the skillet, add cooked ground beef, cream cheese, garlic powder, salt and pepper. Stir to combine. Transfer to casserole dish.

  5. Top casserole with sliced provolone cheese.

  6. Bake for 25 to 30 minutes or until cheese is melted and bubbling.


Notes

If freezing, stop at step 5 and wrap. Unthaw 24 hours then bake as directed.
