Must-Have Ingredients For Your Low Carb King Ranch Casserole

You need to have some important ingredients to make your Low Carb King Ranch Casserole, including:

  • Boneless, Skinless Chicken Breast. Use cubed pieces of boneless chicken breast without the skin to add protein to your casserole. Try making this chicken in the instant pot.
  • Taco Seasoning. The taco seasoning adds flavor to the chicken and the casserole as a whole.
  • Cream Cheese. Create a creamier, cheesier consistency with cream cheese.
  • Bell Peppers. Include a crunch in your casserole by using some bell peppers in the dish.
  • Diced Tomatoes with Green Chilies. Do not forget to add your diced tomatoes with green chilies because they bring more flavor to the dish and go perfectly with the taco seasoning and chicken.

Craving a cheesy, satisfying meal without all the extra carbs? Prepare this Low Carb King Ranch Casserole with fresh ingredients for a creamy, family-friendly casserole dish.

 


Ingredients

10 cups cooked boneless, skinless chicken breast, cubed

  • 2 tablespoons olive oil
  • 1 (16 ounce) package mushrooms, sliced
  • 1 large onion, diced
  • 1 (8 ounce) package cream cheese, room temperature
  • 2 cups chicken broth
  • 1 (28 ounce) can diced tomatoes with green chilies
  • ⅓ cup taco seasoning
  • 1 red bell pepper, seeded and diced
  • 2 green bell peppers, seeded and diced
  • 5 cups shredded colby-jack cheese, divided
  • 2 cups sour cream
  • 1 cup heavy cream
  • 1 teaspoon xanthan gum
  • Salt and pepper, to taste
  • ¼ cup chopped cilantro

 


Instructions

  1. Preheat the oven 350 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.

  2. In a large skillet or dutch oven over medium heat, add the olive oil and add the mushrooms and onions. Cook until the onions are softened, about 5 minutes.

  3. Add the chicken stock and cream cheese, stirring until the cream cheese is completely melted.

  4. To the skillet, add the tomatoes, taco seasoning, and bell peppers. Cook for 2 to 3 minutes or until heated through.

  5. Meanwhile, in a large bowl, stir together 2 cups of cheese, sour cream, heavy cream, and xanthan gum.

  6. Add the contents of the skillet to the bowl and stir to combine.

  7. Divide between the two casserole dishes and top each with the remaining cheese.

  8. To bake, place the casseroles in the oven for 30 minutes. 

  9. Top with fresh cilantro and serve.
