Every now and again I’m in the mood for something a little different. I also like to make sure that my family does eat healthy when possible. When I was looking at some of our favorite recipes, I was trying to find a way to make some of them a little healthier. With some creativity, I came up with this Healthy Beefy Green Bean Casserole Recipe. This is another wonderful addition to the growing collection of Large Family Low Carb Recipes!

Healthy Beefy Green Bean Casserole 

Many of us have had green bean casserole, but none of us have had something this delicious. Some of my kids aren’t big green bean lovers but they will eat this recipe. Every ingredient in this meal helps to create the most perfect meal. You can cook this for your family and everyone can sit down to a nice healthy and hearty meal. Let’s get started!

Ingredients for Healthy Beefy Green Bean Casserole 

It can be incredibly hard to find to find a healthy recipe that will feed your whole family. If you’re serious about feeding them something healthy, but you also want it to be something that they will eat, give this meal a try. 

Ground Beef – When you’re making a meal for a large family, ground beef is the way to go. It’s a protein that is inexpensive but super delicious. You can also make a ton of different meals with ground beef. It’s the most versatile protein out there. 

Beef Broth– To help give this beefy green bean casserole a lot of flavor, don’t be shy about adding beef broth. Plus, the broth can help give you added minerals and vitamins that you need to give your family. 

Mushrooms – I don’t know about you, but I can’t get enough of mushrooms. They add so much flavor to any dish. The good thing is that if you don’t have mushroom lovers in your family, you can easily leave them out. 

Fresh Green Beans – There is nothing quite as delicious as a fresh bag of green beans from the store. The fresh aspect of these green beans really help add to the meal. Of course, if you don’t have fresh on hand, you can always use canned or frozen.

How to Store Healthy Beefy Green Bean Casserole Recipe

After you’ve spent some time making this recipe, you’ll want to be able to store it in the fridge. All you need to store this healthy beefy casserole, is an airtight container. You can put the casserole inside of the airtight container and store it in the fridge. Eat within 3-5 days to keep it from going bad. You can also freeze this meal, just make sure it’s in a freezer friendly container. Consume within 6 months!

Make two 9×13 pans of this Healthy Beefy Green Bean Casserole! It’s low carb and made with ground beef, cream cheese, TONS of green beans, and is super delicious. 



  • 2 to 3 pounds ground beef, browned and drained
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 (8 ounce) package sliced mushrooms
  • 1 (24 ounce) bag fresh green beans
  • 1 ½ cup shredded colby jack cheese



  1. Preheat oven to 350 degrees. Prepare two regular 9×13 casserole dishes or one 11×18 casserole dish with nonstick cooking spray.

  2. In a large skillet over medium-high heat, stir together the cooked ground beef, mushrooms, and cream cheese. (The cream cheese melts easier if already at room temperature.)  Add the beef broth, heavy cream, garlic powder, salt, and black pepper. Stir to combine. 

  3. Meanwhile, place green beans in a large, microwave-safe bowl with ¼ cup water. Cook on high for 5 to 8 minutes or until the green beans are bright green and crisp-tender. Drain.

  4. Stir together the green beans and the beef mixture. 

  5. Divide evenly between the two casserole dishes or place in one large casserole dish. 

  6. Top with cheese.

  7. Bake for 25 to 30 minutes or until the beans are tender and the cheese has melted.

  8. Allow the casserole to rest 5 minutes before serving.
