Ingredients to Use When Preparing the Large Family Ratatouille in the Slow Cooker

If you plan on making the wholesome Large Family Ratatouille in the Slow Cooker, you should have these ingredients:

  • Eggplant. You will need to cut the eggplant into medium-sized cubes before adding them to your slow cooker with other ingredients.
  • Yellow Squash. Not only is it good for you, but yellow squash adds more flavor to the ratatouille.
  • Zucchini. Add zucchini to the dish to include additional healthy ingredients that contribute to the flavor of the dish.
  • Marinara Sauce. Use the marinara sauce as the base for your ratatouille. Here is my Large Family Spaghetti Sauce to use!
  • Minced Garlic. Add just the right amount of garlic to make your meal taste even better.

While making the ratatouille, you will also need salt, onions, olive oil, basil, black pepper, and ripe olives.

How to Freeze Your Large Family Ratatouille 

Did you know that most people say ratatouille tastes even better when reheated? If you make it in big batches for your large family, you can store it in the fridge or the freezer. Always put it in a container with a lid that keeps air out. 

If you want to store the Large Family Ratatouille in the fridge, you can keep it there for as long as five days. If you want to put it in the freezer, you can keep it there a bit longer. The ratatouille will stay good in the freezer for up to six months. If you make extra every time, you will always have some ratatouille available to heat up for the family.

What to Add to Your Large Family Ratatouille

While this is a meatless dish, you can add meat to it if you feel like it needs it. Flank steak is one popular type of meat that people often add to ratatouille. However, you can choose from other meats, including chicken or Italian sausage. If you would like to make the dish even more filling, you can add quinoa or rice. Although optional, these are great additions to the Large Family Ratatouille in the Slow Cooker.

Description

When you crave a warm and comforting meal, the Large Family Ratatouille in the Slow Cooker is just what you need. The delicious meal is easy to prepare in the slow cooker and contains plenty of healthy ingredients to make you feel good.

 


Ingredients

  • 2 medium eggplants, peeled and cut into 1-inch cubes
  • 3 yellow squash, cut into ¾-inch slices
  • 4 medium zucchini, cut into ¾-inch slices
  • 1 tablespoon plus 1 teaspoon salt, divided
  • 2 medium onions, halved and thinly sliced
  • 3 tablespoons olive oil
  • 2 teaspoons dried basil
  • 4 cloves garlic, minced
  • ½ teaspoon black pepper
  • 1 (24 ounce) jar marinara sauce
  • 1 (2-¼ ounce) can sliced ripe olives, drained
  • ⅓ cup coarsely chopped fresh basil

 


Instructions

  1. Place the vegetables in the slow cooker and toss to combine.
    Drizzle with the olive oil and the remaining seasonings, tossing again to combine.

  2. Pour the marinara sauce over the vegetables.

  3. Cover and cook on low for 5 to 6 hours.

  4. Stir in the olives and fresh basil. Cook for an additional 10 to 15 minutes before serving.

  5. After cooking you can freeze this slow cooker meal in freezer friendly soup containers or gallon zip lock bags. When you want to serve again just defrost completely and reheat in the microwave.
