Large Family Slow Cooker Seasoned Pork and Black Bean StewPrint
Craving something savory, slightly spicy, and perfect for eating during cold weather? If so, make this Large Family Slow Cooker Seasoned Pork and Black Bean Stew that your entire family will look forward to digging into when dinner is ready.
- 3 cups dried black beans, picked through and rinsed
- 2 pounds boneless pork loin chops
- 2 (12 ounce) packages hot Italian sausage, casings removed, browned, and drained
- 2 smoked ham hocks
- 1 (20 ounce) package frozen onions and peppers
- 6 garlic cloves, minced
- 4 bay leaves
- 1 ½ teaspoons salt
- 1 teaspoon pepper
- 6 cups water
- 2 pounds smoked sausage, sliced
- Hot cooked rice when ready to serve
In a large slow cooker, place the pork chops in the bottom. Over the pork chops, place the black beans, browned Italian sausage, ham hocks, frozen vegetables, garlic, bay leaves, salt, and pepper. Pour the water over the top.
Cover and cook on low for 7 to 9 hours.
Remove the pork chops and ham hocks, allowing to cool slightly. Shred the meat and return to the slow cooker. Add the sliced smoked sausage. Cook for an additional 30 minutes.
Serve over hot cooked rice.
To freeze, place all ingredients EXCEPT the rice into an airtight container and freeze up to 6 months. Defrost before you need to cook this recipe for a meal. Once defrosted place all ingredients in a large slow cooker and cook on low for 7 to 9 hours. Serve over hot cooked rice.
