Ingredients You’ll Need for Low Carb Chocolate Mousse
3 (8 ounce) packages cream cheese, softened
2 tablespoons vanilla extract
2 cups powdered erythritol sweetener
1 cup cocoa powder
1/2 teaspoon salt
4 cups cold heavy cream
How Do I Store my Chocolate Mousse?
When you have leftovers, you can easily pour the contents of your Low Carb Chocolate Mousse into a large food storage container. Be sure to put a lid on the container and place it in the fridge, where you’ll need to keep your mousse fresh. You can keep it refrigerated for up to four days. How Do I Make Low Carb Chocolate Mousse?
This one is SUPER easy!You will need to start with a chilled bowl. This bowl will help your whipped cream to set up better. One way to chill the bowl is to place it under cold running water, shake it dry, and then place it in your freezer for about ten minutes. Into your chilled bowl, whisk the heavy cream until stiff peaks form. Set your bowl in the fridge until you need it again in a bit.
Take your large mixing bowl and beat the cream cheese until it’s completely smooth of the lumps. Next add the vanilla, sweetener, cocoa powder, and salt into the cream cheese- beating again until everything is combined well.
Now take your chilled whipped cream from the fridge and fold half of it carefully into your chocolate cream cheese mixture. Fold it carefully so that you keep as much air into the mix as possible. Once that is incorporated, go ahead and fold in the remaining cream in the same way.
Once it’s all carefully mixed, it’s ready for plating! Divide the mousse between eight custard cups and refrigerate for at least 2 hours prior to serving.
