- 4.5 pounds ground chuck
- 1 ½ cups water
- ½ cup taco seasoning
- 2 large green bell peppers, seeded and diced
- 1 yellow or orange bell pepper, seeded and diced
- 1 onion, diced)
- 1 (28 ounce) can diced tomatoes with green chiles, drained
- 1 (14.5 ounce) can diced tomatoes in juice, drained
- ½ teaspoon xanthan gum
- 2 cups shredded sharp cheddar cheese
- Iceberg lettuce, shredded
- Roma tomatoes, seeded and diced
- Fresh cilantro, chopped
- Sliced black olives
- Diced avocado
- Sour cream
In a large skillet, brown the ground chuck with the onion, crumbling the meat as you cook. Drain the meat well. Return the beef to the skillet.
With the skillet over medium high heat, add the water and taco seasoning. Bring the water to a boil, and then reduce heat to medium-low. Allow the meat to simmer until the water has evaporated.
Transfer the taco meat to the slow cooker.
Stir the peppers, tomatoes, and xanthan gum into the meat, mixing well.
Cover the slow cooker and cook on low for 4 hours or on high for 2 hours.
When ready to serve, stir the casserole and top with the shredded cheese. Replace the lid until the cheese melts.
Top the casserole with shredded lettuce, diced fresh tomatoes, chopped cilantro, sliced black olives, and diced avocado. Serve with sour cream if desired.
