- 4 stalks celery, diced
- 2 small onion, diced
- 8 cups Low sodium chicken broth
- 2 (13.5 ounce) can coconut milk
- 2 packet ranch seasoning mix
- 1 cup wing sauce
- 4 pounds boneless, skinless chicken thighs, cut into bite-size pieces
- 2 to 3 teaspoons xanthan gum, for thickening
Place all ingredients EXCEPT xanthan gum into the slow cooker. Stir to combine.
Cover the slow cooker and cook on high for 3 hours.
Stir in xanthan gum, if desired, and allow to cook an additional 15 minutes or until thickened.
