Thankfully there is Instant Pot Lazy Lasagna. This recipe ranks up there with Instant Pot spaghetti but with lasagna flavor. It’s amazing how having the right kitchen appliance can make your life so much easier.

Large Family Instant Pot Lazy Lasagna
My Instant Pot Lazy Lasagna gives you the delicious taste of traditional lasagna dinner but saves you precious time by preparing it in the Instant Pot! Just add some Italian bread and a salad to make it a fulfilling dinner!!
Preparing the Instant Pot Lazy Lasagna
Set the Instant Pot to saute to get hot. Add oil and onions. Cook until onions are translucent then add garlic. Add the water and scrape the bottom to get all the good bits off. This also helps to keep the Burn warning at bay because of the bits still stuck on the bottom.
Pour the pasta into the Instant Pot. In a mixing bowl, combine ground chuck, tomatoes, and seasonings. Pour over pasta in Instant Pot. DO NOT STIR. Seriously, do not stir anything.
Cover the pressure and set to seal. Cook on manual for 4 mins. Quick-release as soon as it’s done the pressure cook cycle. Now, stir it all together. Add the cottage cheese and mix together gently. Top with cheese and cover while it melts.

Love the taste of lasagna but not the prep work? This Instant Pot recipe gives you all the taste with a fourth of the work.
Ingredients
- 2-3 pounds ground chuck, browned and drained
- 1 tablespoon olive oil
- 2 onions, diced
- 4 cloves garlic, minced
- 6 cups water
- 2 (16 ounce) boxes radiatore macaroni or miniature lasagna noodles
- 2 (28 ounce) cans crushed tomatoes
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 2 cups shredded mozzarella
- 2 cups cottage cheese
Instructions
PRESSURE COOKER DIRECTIONS

Set the pressure cooker to “saute” until hot. Add the oil and onions. Cook the onions until softened. Stir in the garlic.

Add the water and scrape the bottom of the pan to deglaze and remove any cooked on pieces.

Pour the pasta into the pressure cooker.

In a large bowl, stir together the ground chuck, tomatoes and seasonings. Pour over the pasta. Do not stir.

Cover and seal the pressure cooker. Set to “pressure cook” or “manual” for 4 minutes. When the cycle is complete, quickly release the steam.

Stir together to pasta, breaking apart any noodles that have stuck together.

Add the cottage cheese and stir until just mixed through.

Top with cheese and cover until melted.
Notes
To cook in the slow cooker, add all the ingredients EXCEPT the cottage cheese and mozzarella cheese to the slow cooker, tossing together well. Cook on low for 4-6 hours. Before serving, stir cottage cheese into the mixture. Top with mozzarella cheese. Cover until the cheese is melted.
Serve Instant Pot Lazy Lasagna with salad, carrot sticks, or garlic bread. It’s great all by itself for real and for true. Make 2 Instant Pots if you don’t think one will serve your brood or you want leftovers. Leftovers for lunch is a beautiful thing.
