Large Family Instant Pot Cheesy Burrito Pasta RecipePrint
If you like pasta and burritos, combine the two to create a unique and flavorful dish to eat with your family. The Large Family Instant Pot Cheesy Burrito Pasta is easy to prepare and is the perfect meal to make when you have several children at home.
- 2 pounds ground chuck
- ¼ cup taco seasoning
- 6 cups beef broth
- 2 cups salsa
- 2 cups frozen corn
- 2 cans black beans, rinsed and drained
- 1 (16 ounce) box penne pasta
- 3 cups shredded fiesta blend cheese
- 2 roma tomatoes, seeded and diced, for garnish
- 2 avocados, diced, for garnish
- ½ cup sliced black olives, for garnish
Using the saute mode, heat the electric pressure cooker until “hot.” Add the ground beef and cook until the beef is browned and crumbled. Drain well. Cancel the saute mode.
Return the beef to the pressure cooker and stir in taco seasoning. Add the remaining ingredients in this order: corn, black beans, penne pasta, and salsa. Do not stir.
Place the lid on the electric pressure cooker and set the valve to sealing. Set the pressure cooker to “manual” or “pressure cook” for 5 minutes. Quick release the pressure when the cook cycle is complete.
Stir 2 cups of cheese into the pasta. Top with remaining cheese and place the lid over the pressure cooker just until the cheese melts.
Serve the burrito pasta garnished with tomatoes, avocados, and black olives if desired.
