- 4 Large boneless, skinless chicken breasts
- Green salsa
- Cream of chicken soup
- Chili powder
- Ground cumin
- Garlic powder
- 2 limes, juice and zest
- Shredded Monterey jack cheese
- Fresh cilantro, chopped
- Rice

How Do I Make Low Carb Creamy Cilantro Lime Chicken and Rice?
Place your chicken into the bottom of your prepared slow cooker. Next, top the chicken with the green salsa, cream of chicken soup, chili powder, ground cumin, garlic, lime juice, and lime zest. Stir these all together and combine well.
Cover your slow cooker with the lid and cook the meal on Low for five hours. Next, carefully shred the hot chicken using two forks. You can also remove the chicken to cut it into bite size pieces if you’d prefer. Return the chicken into the slow cooker, and turn it to the Warm setting. Stir in the cheese, cilantro, and rice.

Ingredients
4 large boneless, skinless chicken breasts
1 cup green salsa
2 (10.5 ounce) cans cream of chicken soup
1 tablespoon chili powder
1 tablespoon ground cumin
1 teaspoon garlic powder
2 limes, juice and zest
2 cups shredded monterey jack cheese
1 bunch fresh cilantro, chopped
4 cups cooked rice
Instructions

Prepare the slow cooker liner with nonstick cooking spray. Place the chicken into the bottom of the slow cooker.

Top the chicken with the green salsa, cream of chicken soup, chili powder, ground cumin, garlic, lime juice, and lime zest. Stir together to combine.

Cover the slow cooker and cook on low for 5 hours.

Carefully shred the chicken using two forks or remove the chicken and cut into bite-size pieces. Return the chicken to the slow cooker.
