For the crust:
- 1 ½ cup fine almond flour
- 1 cup pecan halves and pieces
- 2 tablespoons powdered erythritol
- ⅓ cup butter
For the cream cheese layer:
- 1 (8 ounce) package cream cheese
- ⅓ cup powdered erythritol
- ½ teaspoon vanilla extract
- 1 (8 ounce) container frozen whipped topping
For the pudding layer:
- 2 (1.4 ounce) boxes sugar free chocolate pudding mix
- 4 cups cold milk
For the whipped topping layer:
- 1 (8 ounce) container frozen whipped topping
- 1 tablespoon sugar free chocolate chips or ½ ounce sugar free chocolate, grated
How to Make the Large Family Low Carb Layered Dessert
Start by preheating your oven and preparing your baking dish.
Place your almond flour, pecans, and powdered erythritol into your food processor and pulse until the pecans are finely ground. Next, add the butter and continue to pulse until the entire mixture comes together. Pour mixture into your pan and press the almond mixture into the bottom of the dish, creating an even layer. Place pan in oven and bake for 20 minutes. You’ll need to remove once done and place in the open to cool completely.
Now while that’s cooling, you’ll make your layers. To make the cream cheese layer, beat the cream cheese, erythritol, and vanilla until smooth and creamy, about 5 minutes. Fold in the whipped topping.
Now you get to make your pudding layer. To make the pudding layer, beat the pudding mix and milk for two minutes or until the pudding is smooth and thickened.
Now you get to assemble everything! Using your COOLED crust, spread your cream cheese mixture over he crust. Over the cream cheese layer, carefully pour and spread your chocolate pudding. Top the layered dessert with the remaining whipped topping. Grate sugar free chocolate over the top. You’ll need to cover and refrigerate for several hours or overnight prior to serving.

Ingredients
For the crust:
1 ½ cup fine almond flour
1 cup pecan halves and pieces
2 tablespoons powdered erythritol
⅓ cup butter, melted
For the cream cheese layer:
1 (8 ounce) package cream cheese, room temperature
⅓ cup powdered erythritol
½ teaspoon vanilla extract
1 (8 ounce) container frozen whipped topping, thawed
For the pudding layer:
2 (1.4 ounce) boxes sugar free chocolate pudding mix
4 cups cold milk
For the whipped topping layer:
1 (8 ounce) container frozen whipped topping, thawed
1 tablespoon sugar free chocolate chips or ½ ounce sugar free chocolate, grated
Instructions

Preheat the oven to 325 degrees. Prepare a 9×13 baking dish with nonstick cooking spray.

In a food processor, place the almond flour, pecans, and powdered erythritol. Pulse until
the pecans are finely ground. Add the butter and pulse until the mixture comes together.

Press the almond mixture into the bottom of the prepared baking dish, creating an even layer. Bake for 20 minutes. Allow the crust to cool completely.

To make the cream cheese layer, beat the cream cheese, erythritol, and vanilla until smooth and creamy, about 5 minutes. Fold in the whipped topping. Spread in an even layer over the crust.
