Healthy Homemade Keto Low Carb Ice Cream

Keto Ice Cream in a Jar

It’s no secret that I love Ice Cream. Ice Cream is my favorite. I also love coming up with sweet treats that are Keto, Low Carb, and Trim Healthy Mama friendly. That’s why my new homemade keto ice cream happens to be the bomb dot com (that’s a technical term, yo). I make this low carb ice cream in freezer safe mason jars for my “momma only” ice cream stash.

My Halo Top Replacement

I found myself having a pint of Halo Top a day. Don’t worry, that’s not a bad thing. If I have Halo Top in my freezer and life gets busy (daily) it’s easy for me to grab a pint of Halo Top and just have that for lunch. Recently though I was out of Halo Top and I thought this would be a good opportunity for me to make homemade Keto ice cream!

Last month when I finished making 20 healthy freezer meals and had two counters 1/2 filled with Heavy Cream (happens!). I know from my time doing Trim Healthy Mama that unsweetened cocoa powder is awesome for making healthy homemade desserts. I figured I’d also use Stevia since that’s my sweetener of choice and I can get it for a pretty good price at Walmart.

Peanut Butter is Everything

BUT WHAT I REALLY LOVE IS PEANUT BUTTER!!! It’s true. I love peanut butter in all its forms. So I decided to also add peanut butter powder to this homemade keto ice cream to make it more of a peanut butter cup flavor. I also find this PB Fit Powder at Walmart (here’s my Amazon affiliate link if you’d like to buy PB Fit Powder on Amazon).

I’ve been whipping up two (8 oz) jelly glass jars full at a time here lately. This is so I can easily freeze this homemade Keto ice cream in momma single snack size servings. I store my momma snack stash in the freezer, usually by the frozen vegetables so no one notices, ha!

In recent days I’ve been having this low carb ice cream treat at bedtime. Some days I’ve shared with some really cute little boys as you can see in this new large family mom day in the life video.

In this new video Benjamin, Daniel and I had gone for a walk down our road. I convinced almost two-year-old Benjamin to walk back up the hill for home (vs. mommy carrying him) by saying, “let’s go get some of mommy’s ice cream!” Let me tell ya, he knows what’s good and happily marched up the hill and towards the back deck for his ice cream treat!

This low carb keto ice cream tastes to me like a Wendy’s Frosty and a Peanut Butter Cup got married and had a healthy baby named Peanut Butter Chocolate Keto Ice Cream. Yes, and Amen!

You can omit the peanut butter powder if you’d just like all chocolate. Or, omit the chocolate and keep the peanut butter. This is a really fun, simple, and healthy ice cream recipe that I hope you enjoy.

Healthy Homemade Keto Ice Cream in a Jar | Low Carb, Trim Healthy Mama S, too!

If you’re a momma looking for low carb, Keto, and Trim Healthy Mama treats you’ll love this Homemade Keto Ice Cream. I love to add peanut butter powder and cocoa powder for a peanut butter cup-ish taste. Make in your favorite freezer safe containers! I use 8 oz freezer safe jelly jars since I have those on hand.


Ingredients

To make two make two 8 oz jelly jars full of this Keto Ice Cream you’ll need the following:

  • 2 cups Heavy Cream
  • 2 tablespoons Peanut Butter Powder
  • 2 tablespoons unsweetened Cocoa Powder
  • 2 tablespoons Stevia

Instructions

  1. In each freezer container add 1 cups of heavy cream, 1 tablespoon of peanut butter powder, 1 tablespoon of unsweetened cocoa powder, and 1 tablespoon of stevia.
  2. Stir, stir, stir! I stir each jar full for a full minute to blend the ingredients.
  3. Place in the freezer for a few hours. Screw off the lid and enjoy! 

Notes

If you’d like to omit the peanut butter powder just replace it with a 2nd tablespoon of unsweetened cocoa powder if you’d like. If you’ve like to omit the chocolate you can do the same, just add the 2nd tablespoon of peanut butter powder – yum!
