Make a quick combo breakfast for your loved ones with this Big Family Smoked Sausage and Potatoes Sheet Pan Breakfast Hash recipe. It is a fast and simple meal that will keep you full!
Ingredients
- 2 (28 ounce) bags potatoes O’Brien
- 2 (16 ounce) package smoked sausage, halved and sliced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- Additional diced bell peppers, if desired
Instructions

Preheat the oven to 425 degrees. Prepare two large rimmed baking sheets with parchment paper or aluminum foil spritzed with nonstick cooking spray.

In a large bowl, pour olive oil over the potatoes o’brien. Toss to coat adding additional oil is needed. Add the seasonings and stir to coat evenly.

Divide the potatoes between the two baking sheets.

Bake for 10 minutes.

Remove from the oven and stir the potatoes. Add the sausage as well as any additional bell peppers (if desired.)

Return to the oven and continue baking for 15 to 20 minutes or until the potatoes and sausage are cooked through.

Optional: You can add eggs to this recipe by creating wells among the potatoes and cracking an egg over each hole. Season with salt and pepper and return to the oven until the eggs have reached the desired doneness.
