What You Will Need to Make the Slow Cooker Freezer-Friendly Tamale Casserole
Prepare the Tamale Casserole using the following ingredients:
- Ground Beef. Use three pounds of lean ground beef. Here are more ground beef recipes to try!
- Onions. Dice your onions into small pieces.
- Green Bell Peppers. Cut your bell peppers into pieces and remove the seeds before using them.
- Taco Seasoning. This makes the meal. I have lots of taco-style meals!
- Frozen Corn. Add two cups of frozen corn into the slow cooker.
- Fiesta Blend Cheese. Add a cheesy touch to your casserole with the fiesta blend cheese.
The only other ingredients needed are tomato sauce and corn muffin mix.
Can I Use Ground Turkey?
You can use ground turkey as an alternative for the ground beef in this recipe. If you do not want to use ground beef, ground chicken is another alternative that works in this recipe. Feel free to use a combo of both ground turkey and ground beef if you would like to make this casserole a bit leaner.
Can I Use Other Bell Peppers?
The Slow Cooker Freezer-Friendly Tamale Casserole includes green peppers that you would need to dice into pieces. If you would rather use red, yellow, or orange bell peppers, it is fine to do so. The lighter bell peppers have a slightly sweeter taste, but they will still taste good with the seasoned meat, cheese, and other ingredients.
Can I Freeze It?
Yes! you can freeze the casserole before preparing it to feed your large family. The best way to do this is to prepare the ground beef with onion and green peppers.
Once you have cooked these ingredients, allow them to cool, and then add them to a freezer bag with the rest of your ingredients, except for the corn muffin mix.
You can place the freezer bag full of ingredients into your freezer and leave it there for a maximum of three months. Be sure to thaw the ingredients for your Large Family Slow Cooker Freezer-Friendly Tamale Casserole overnight in the fridge before you add them to your slow cooker. Enjoy a meal that you can prepare in advance and freeze with this Large Family Slow Cooker Freezer-Friendly Tamale Casserole. It is an easy meal that cooks slowly on the low setting of your slow cooker throughout the day.
Ingredients
- 3 pounds lean ground beef
- 2 onions, diced
- 2 green bell peppers, seeded and diced
- 2 cups frozen corn
- ¼ cup taco seasoning
- 2 (14.5 ounce) cans tomato sauce
- 2 cups fiesta blend cheese
- 1 box Corn muffin mix with ingredients to prepare the batter
Instructions

Prepare the slow cooker with nonstick cooking spray.

In a medium skillet, cook the ground beef with the onion and bell peppers, crumbling the beef as it cooks until the beef is no longer pink. Drain well and transfer to the slow cooker.

Add the frozen corn, taco seasoning, and tomato sauce to the slow cooker. Stir to combine.

Cover and cook on low for 3 to 4 hours.

Prepare the batter.

Top the beef mixture with the cheese and spoon the batter over the top.

Cover and switch the slow cooker to high. Continue cooking for 1 hour or until the cornbread layer is cooked through and no longer runny.
Notes
How to freeze: Brown the ground beef with the onion and bell peppers as directed and drain. Place ingredients EXCEPT the muffin mix in an airtight container or freezer bag. Freeze up to 3 months. Thaw in the refrigerator overnight. Transfer ingredients to the prepared slow cooker and follow the directions about to cook.
