You will need the following ingredients to make your Large Family Low Carb Creamy Pork Casserole:

  • Pork Loin Chops. Use pork loin chops for this dish because of the flavor and consistency they add to the casserole.
  • Chicken Stock. The chicken stock adds a wholesome flavor to the dish while keeping the pork chops moist.
  • Cream Cheese. Add cream cheese to the dish to make it creamier while adding flavor to it.
  • Petite Diced Tomatoes. The tomatoes add a slight acidic taste to the dish without taking away from the flavors of the cheese, chicken stock, and pork.
  • Butternut Squash. Not only is it good for you, the butternut squash brings flavor to the dish.

You should also have a few other ingredients, including olive oils, onion, garlic, baby bella mushrooms, hot sauce, salt, and pepper, to create this casserole.

Different Substitutions You Can Consider Using to Prepare the Low Carb Creamy Pork Casserole


If you do not like cream cheese, you can replace it with other ingredients, such as cottage cheese, ricotta cheese, and even sour cream. If you do not have diced tomatoes, you can always use stewed tomatoes or leave them out of the dish. You may want to add some extra ingredients to this dish, such as spinach, chopped broccoli, peas, and corn. Putting vegetables in this dish is a great way to get your children to eat them because the vegetables are hidden yet still add more to the meal.

Ways to Freeze Your Low Carb Creamy Pork Casserole

Store the Low Carb Creamy Pork Casserole in a glass or plastic food storage container. You can leave it in the fridge to keep it fresh for up to five days. If you need to keep it fresh longer than that after making it, you can put the casserole in the freezer. It will stay fresh in the freezer for up to four months. You would need to let the casserole defrost in the refrigerator before putting the food back in the oven to reheat it.

Description

Craving a delicious yet easy-to-make pork dish that your family will love to eat? Gather your ingredients and make this flavorful, cheesy Large Family Low Carb Creamy Pork Casserole because it is simple and good for you.

 


Ingredients

  • 2 family packs (about 6 pounds) boneless pork loin chops, cut into 1- to 2-inch pieces
  • 2 tablespoons olive oil
  • 2 cups chicken stock, divided
  • 2 onions, diced
  • 4 cloves garlic, minced
  • 1 (16 ounce) package baby bella mushrooms, sliced
  • 1 large butternut squash, peeled and cubed
  • 1 tablespoon paprika
  • 1 (28 ounce) can petite diced tomatoes
  • 2 teaspoons hot sauce, optional
  • 1 (8 ounce) package cream cheese, room temperature
  • Salt and pepper, to taste

 


Instructions

  1. Preheat the oven 350 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.

  2. Season the pork with salt and pepper as desired.

  3. In a large skillet or dutch oven over medium heat, add 1 tablespoon of the olive oil and brown half of the pork on both sides. Repeat with the second half of the pork until all of the pork is browned. Transfer the pork to the prepared casserole dishes.

  4. To the skillet, add ½ cup of chicken stock to deglaze the pan, scraping the bottom of the pan with a wooden spoon. Add the onion and cook until softened.

  5. Add the mushrooms, garlic, butternut squash, and paprika to the skillet, cooking for 2 to 3 minutes or until the mushrooms and butternut squash begin to soften.

  6. To the skillet, add the tomatoes, hot sauce (if using,) and the remaining chicken stock.

  7. Bring the contents of the skillet to a boil. Reduce the heat to medium and cook for 3 to 5 minutes. 

  8. Stir in the cream cheese, continuing to stir until the cream cheese is completely melted. Pour the sauce over the pork pieces. 

  9. To bake, place the casseroles in the oven, covered, for 40 minutes. Then,  remove the cover and cook for an additional 15 minutes.
