Large Family Low Carb No Bake Cookies!

These Large Family Low Carb No Bake Cookies come out fudgy, chewy and are so divinely scrumptious, your family will never know they are eating low carb! They’re super easy to whip up (no cooking required) and you only need 7 simple real food ingredients.
Prep Time 20 minutes

Ingredients
  

  • ½ cup 1 stick salted butter
  • 1 cup creamy peanut butter
  • ½ cup cocoa powder
  • 1 teaspoon liquid stevia
  • 1 teaspoon vanilla extract
  • 2 cups unsweetened flaked coconut
  • 1 ½ cups pecans coarsely chopped

Instructions

  • Prepare a large baking sheet with waxed or parchment paper.
  • In a microwave-safe bowl, place the butter and peanut butter. Heat in the microwave for 30 seconds. Stir well and heat for another 30 seconds if needed.
  • To the butter mixture, add the remaining ingredients and stir until completely combined.
  • Using a large scoop, scoop the cookies into about 20 to 24 mounds on the prepared baking sheet. Flatten the cookies slightly.
  • Freeze the cookies until set. Remove the cookies from the waxed paper and place in an airtight container to store in the refrigerator or freezer.
