- Salted butter
- Creamy peanut butter
- Cocoa powder
- Liquid stevia
- Vanilla extract
- Unsweetened flaked coconut
- Pecans
Here’s How Easy These are to Make:
Prepare a large baking sheet with waxed or parchment paper. There’s no oven to preheat! Win-win!
In your microwave-safe bowl, toss in the butter and peanut butter then heat in the microwave for about 30 seconds. Take out and then stir well. Then heat again for another 30 seconds if needed. Make certain that everything is mixed well and melted.
Next, add the remaining ingredients and stir until completely combined. The cookies are now done and you’re ready to place them on the cookie sheet! Using a large scoop, scoop the cookies into about 20 to 24 mounds on the prepared baking sheet. Flatten the cookies slightly.
Freeze the cookies until set. Remove the cookies from the waxed paper and place in an airtight container to store in the refrigerator or freezer.

1 ½ cups pecans, coarsely chopped
