My Low Carb Cheesecake Fluff recipe is super simple and can be made in just a few minutes but it’s made for your large family size in mind. Once it’s ready, it can be the perfect mid-afternoon go-to snack to satisfy your sweet tooth, or be served up for a rich after dinner dessert. This kind of rich yet light dessert compliments a savory sheet-pan dinner, or maybe you just want it for a light afternoon snack. The choice is yours!
What You’ll Need on Hand
To whip up this Low Carb Cheesecake Fluff, you truly only need a few ingredients. And this recipe is so simply and easy to make, you’ll find yourself making it often!
- 2 (8 ounce) packages cream cheese, room temperature
- 2 ½ cups cold heavy cream, divided
- ⅔ cup powdered erythritol
- 1 teaspoon vanilla
How To Make Your Low Carb Cheesecake Fluff
This Cheesecake Fluff is made without the oven so it makes a favorite warm weather treat for you and your Large Family. Start by grading your large mixing bowl. Add your cream cheese, 1/2 of the heavy cream, the powdered erythritol, and the vanilla. Beat these until completely combined and smooth. Seriously, you can’t whip this dessert too much. The longer you mix, the more fluffy it will be.
In another bowl whip the second half of the heavy cream until stiff peaks form. Once the stiff peaks form ,you have your whipped cream–don’t mix any further.
Fold half of your whipped cream into the cream cheese mixture in your large bowl. Once you’ve folded the firsts half in carefully, fold the second half into the large bowl. By folding these in carefully, you’ll keep it airy and full of the fluff!
Divide into your serving bowls and refrigerate for at least two hours, but it’s best if left overnight. When you’re ready to serve, add your favorite berries or toppings and enjoy!

Ingredients
2 (8 ounce) packages cream cheese, room temperature
2 ½ cups cold heavy cream, divided
⅔ cup powdered erythritol
1 teaspoon vanilla
Instructions

In a large mixing bowl, add the cream cheese, ½ cup heavy cream, powdered erythritol, and vanilla. Beat until smooth and creamy.

In another bowl, whip the heavy cream until soft peaks form into a whipped cream.

Fold half of the whipped cream into the cream cheese mixture from step one. Then, fold the remaining whipped cream into the mixture.

Divide the cheesecake fluff between serving dishes and refrigerate for at least two hours but best if overnight.
