Large Family Slow Cooker Lemon Sesame Chicken and Rice Soup

When you need a warm, comforting meal, make this Large Family Slow Cooker Lemon Sesame Chicken and Rice Soup. Serve it with a side of crispy buttered bread that you can dip it into.

- 6 to 8 boneless skinless chicken thighs
- 2 teaspoons salt
- 2 teaspoons dried thyme leaves
- 2 cups diced carrots
- 1 onion diced
- 2 stalks celery diced
- 1 teaspoon ground ginger
- 2 teaspoons garlic powder or 8 cloves garlic minced
- 1 tablespoon sesame oil
- ½ teaspoon ground black pepper
- 3 bay leaves
- 6 cups chicken stock
- 1 lemon zest and juice
- 2 tablespoons soy sauce4 to 5 cups cooked rice

Place all ingredients EXCEPT the cooked rice into the slow cooker.
Cover and cook on low for 6 to 8 hours.
Remove the lid and shred the chicken or cut it into bite-size pieces. Return the chicken to the slow cooker and add the rice. Stir together. Adjust seasonings if desired.
How to freeze: Place all ingredients EXCEPT the rice in an airtight container or freezer bag. Freeze up to 3 months. Thaw in the refrigerator overnight. Transfer ingredients to the prepared slow cooker and follow the directions about to cook.
