Will Chicken Breast Work as an Alternative?
While chicken thighs are the best meat to use for the soup, you can use chicken breast. Be sure to use boneless, skinless chicken, regardless of which cut you decide to use in your soup. Ingredients
6 to 8 boneless, skinless chicken thighs
2 teaspoons salt
2 teaspoons dried thyme leaves
2 cups diced carrots
1 onion, diced
2 stalks celery, diced
1 teaspoon ground ginger
2 teaspoons garlic powder or 8 cloves garlic, minced
1 tablespoon sesame oil
½ teaspoon ground black pepper
3 bay leaves
6 cups chicken stock
1 lemon, zest and juice
2 tablespoons soy sauce4 to 5 cups cooked rice
Instructions

Place all ingredients EXCEPT the cooked rice into the slow cooker.

Cover and cook on low for 6 to 8 hours.

Remove the lid and shred the chicken or cut it into bite-size pieces. Return the chicken to the slow cooker and add the rice. Stir together. Adjust seasonings if desired.
Notes
How to freeze: Place all ingredients EXCEPT the rice in an airtight container or freezer bag. Freeze up to 3 months. Thaw in the refrigerator overnight. Transfer ingredients to the prepared slow cooker and follow the directions about to cook.
