Large Family Supreme Pizza Muffins | Freezer Lunch Meal

Prepare a freezer meal your children will love with this Large Family Supreme Pizza Muffins recipe. The muffins are easy to make and will taste great!

Ingredients
  

  • 1 small onion diced
  • 1 green bell pepper seeded and diced
  • 1 teaspoon olive oil
  • 6 cups homemade baking mix
  • 2 ½ cups pizza sauce
  • 1 ½ cups water
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked and crumbled sausage
  • ½ 5 ounce pack mini pepperoni

Instructions
 

  • Preheat the oven to 350 degrees. Prepare two muffin tins with cupcake liners. Spritz the liners lightly with nonstick cooking spray.
  • In a medium skillet over medium-high heat, add the olive oil, onion, and bell pepper. Cook until softened, about 5 minutes, stirring as needed.
  • In a large bowl, mix all the ingredients, including the onion and bell pepper, until combined.
  • Using a large cookie scoop, fill the muffin cups to about three-fourths full.
  • Bake for 17 to 20 minutes.  
  • Transfer muffin tins to a wire rack and cool for 5 minutes before removing muffins from the baking pan. 
  • Serve with additional warm pizza sauce if desired.

Notes

To freeze: Individually wrap the muffins in plastic wrap and place in an airtight container. Store for up to 6 months. Unwrap to reheat in the microwave or oven.
