When you want a change from the usual breakfast foods you prepare, make this delicious Large Family Vegetable Breakfast Casserole. You can put it all together within minutes and make plenty of food for your large family.

Cook Time 50 minutes

Ingredients
  

  • 20 eggs
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 tablespoon butter
  • 1 small onion diced
  • 2 red bell peppers diced
  • 1 8 ounce package mushrooms, coarsely chopped
  • 1 5 ounce package baby spinach, coarsely chopped
  • 4 cups shredded mozzarella cheese
  •  

Instructions
 

  • Preheat oven to 350 degrees. Prepare two 9x13 casserole dishes with nonstick cooking spray.
  • In a large skillet over medium-high heat, melt the butter. Add the onion, bell pepper, and mushrooms. Cook, stirring as needed, until the onion has softened.
  • Place the spinach in the bottom of the casserole dishes. Top with cooked vegetables.
  • In a large bowl, beat together the eggs, milk, and seasonings. Pour over the casseroles.
  • Cover the casseroles with cheese.
  • Bake for 45 to 60 minutes or until the center is set and the cheese is melted.
