Ingredients
  

  • 5 to 6 pounds boneless/skinless chicken tenderloins
  • 2 12 ounce packages brussel sprouts, halved
  • 1 red bell pepper seeded and cut into 1-inch pieces
  • 1 green bell pepper seeded and cut into 1-inch pieces
  • 1 yellow bell pepper seeded and cut into 1-inch pieces
  • 1 8 ounce package sugar snap peas
  • 1 cup soy sauce
  • ½ cup honey
  • 2 tablespoons sweet chili sauce
  • 2 teaspoons sesame oil
  • 4 cloves garlic minced or 1 teaspoon garlic powder
  • ½ teaspoon ground ginger
  • Salt and black pepper
  • 1 teaspoon sesame seeds

Instructions
 

  • Preheat the oven to 400 degrees. Prepare two large baking sheets with aluminum foil and grease with olive oil or spray with nonstick cooking spray.
  • Whisk together the soy sauce, honey, sweet chili sauce, sesame oil, garlic, ginger, salt, and black pepper.
  • In a bowl, pour half the marinade over the chicken and toss to coat completely. Arrange the chicken on the baking sheets, leaving space for the vegetables between the pieces..
  • In a large bowl, toss the vegetables with the remaining marinade. Then arrange the vegetables around the chicken.
  • Bake the chicken, tossing halfway, for 25 to 30 minutes or until the chicken is cooked through and an internal temperature of 165 degrees is reached.
