LOW CARB BUFFALO CHICKEN CASSEROLE BAKE

This flavorful low carb meal will satisfy your hunger while exploding your taste buds.

- 1 to 2 pounds chicken breast cooked and cubed
- 1 cauliflower riced (about 5 cups)
- ½ cup buffalo sauce plus additional for garnish if desired
- 1 8 ounce package cream cheese, softened
- 1 cup cheddar cheese
- Sliced green onions for garnish if desired
Preheat oven to 350 degrees. Prepare a 9x13 baking dish with nonstick cooking spray.
In a large bowl, combine cream cheese, buffalo sauce, and ½ cup cheddar cheese. Stir until combined.
Add the chicken and cauliflower to the bowl, mixing well. Transfer to baking dish, spreading evenly.
Top casserole with remaining cheese.
Bake for 30 minutes or until the edges are bubbling and the cheese has melted in the middle.
Remove from oven and drizzle with additional buffalo sauce if desired. Also tastes amazing served with a drizzle of ranch or blue cheese dressing.
