Slow Cooker Cabbage Soup: Trim Healthy Mama Inspired!

Want to know something hilarious about the picture above? Let’s just list all the things I should not be doing. I should not attempt to hold two platters loaded down with veggies and fixings, while trying to capture said items in a selfie to have a thumbnail for today’s new YouTube video. Back to great wisdom from Finding Nemo, which serves as the narrative for my life, “You think you can do these things, Nemo, but you just can’t.”
You can guess what happened, right? I go to set the platters down on the counter and I spill a huge portion of the veggies and end up having to re-chop a bunch. I had a brief window of time while Daniel and Amelia napped, and Gabriel and Liam were listening to music while creating with LEGOs, to complete my Slow Cooker Cabbage Soup. So there, now that you know the back story to the picture above I feel it’s safe to share my Cabbage Soup recipe with you.
I’m hitting my Trim Healthy Mama reboot hard and have had great success over these last few weeks. Several factors had led to my previous THM weight loss stall. I plan to share more on my THM reboot next week. In the meantime you can read about how I started THM and how I’ve lost and mostly kept off 20 lbs during my pregnancy with Daniel and while breastfeeding.

Cabbage Soup Recipe
- 1 head of cabbage
- 1 yellow squash
- 1 zucchini
- 1/2 cup shredded carrots
- 1 cup brown rice
- 48 oz chicken broth
- 1 green onion
- 8 cups of water
- salt/pepper/onion powder/garlic powder, to taste
- 2 pre-cooked chicken breasts, shredded
- 1/2 cup butter
Using a 6-8 Qt Slow Cooker {aff link} add in all the ingredients listed above. Cook on high for 3 hours. Really, it’s as simple as that!
I consider this recipe a Trim Healthy Mama S-meal. Yes, there’s 1/2 a cup of shredded carrots (about 5 carbs), plus 1 cup of brown rice (about 40 carbs). However, spread out over 6-8 quarts of soup, I don’t believe those will push you over your carb count (S-meals are low carb/high fat).
The beauty of this recipe is you really can’t go wrong. A few weeks ago all I had on hand was cabbage, chicken broth, and 4 chicken breasts. I threw it all in my slow cooker and came up with this wonderful homemade cabbage soup. I ate it all within 2 days. Oh yes, I did.

I found you this summer on YouTube shortly after we decided to pull our 6 boys out of public school and started to homeschool them. Wow!! What a blessing and an encouragement you’ve been to me. I look forward every day to sneak away and watch another video. Thank you for what you do for us Moms. I just think God is so good to give me your example just when I needed it most. I am not as scared and lost in this new world. Maybe I can do this!!!

Can I just say what a blessing your website has been! We are a homeschooling family of 4 . I usually cut your recipes in half and slowly am stalking up my freezer. I just love that your recipes are “real”. They dont have 5 million ingredients that cost a fortune. We are on a budget but put eating healthy high up on our list. I totally thought eating healthy ment I had to spend a ton of money. You have proven that wrong! Thank you and I pray God blessed you for all your efforts on this blog!
