Get ready to prepare the Big Family Corn Chip Pie Casserole by getting your ingredients together. You will need:

  • Ground Beef. Grab at least two and a half pounds of lean ground beef for this dish. Here are more ground beef recipes you will enjoy!
  • Onions. Dice your onions before you use them.
  • Taco Seasoning. Use the taco seasoning for your ground beef to give it such a great taste. Try these amazing taco recipes if you love tacos.
  • Enchilada Sauce. Grab any brand of enchilada sauce for this casserole.
  • Corn Chips. Add the perfect crunch to your casserole with the Corn Chips.
  • Fiesta Blend Cheese. Give your casserole a cheesy touch with the fiesta blend cheese. Leave the cheese off altogether or replace it with a dairy-free option if you are making this recipe dairy-free.

You will also need water, drained black beans, and sliced green onions to complete the recipe.

Yes, you can use an alternative for ground beef. If you do not eat ground beef, you can use ground turkey or ground chicken as substitutes. These ground meats will taste great with all the other ingredients you will use to prepare the casserole.

All you will need to do is cover the casserole dish with aluminum foil before placing it in your freezer, where it will stay fresh for as long as three months. Remember to let it thaw overnight before you decide to put it in the oven and bake it. You would follow the same instruction to heat your casserole before serving it to your loved ones.

Make a kid-friendly, parent-approved crunchy casserole that your big family can enjoy. This meaty meal will leave your loved ones full and satisfied for hours.



  • 2.5 pounds lean ground beef
  • 2 onions, diced
  • ⅓ cup taco seasoning
  • 1 cup water
  • 2 (19 ounce) cans red enchilada sauce
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 (9.25 ounce) bags Fritos corn chips
  • 4 cups shredded fiesta blend cheese, divided
  • ½ cup sliced green onions



  1. Preheat the oven to 350 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.

  2. Divide one bag of corn chips between the two casserole dishes, spreading the corn chips across the bottom in an even layer. Top the corn chips with cheese, using about 1 cup in each casserole dish.

  3. In a stock pot over medium-high heat, cook the ground beef and onion, crumbling as it browns. Drain well and return to the stock pot.

  4. To the stock pot, add the taco seasoning, water, enchilada sauce, and black beans. Bring to a boil and reduce heat to medium-low. Cook for 15 to 20 minutes.

  5. Pour the sauce over the corn chips and top with remaining cheese.

  6. Bake for 20 minutes or until the edges are bubbling and the cheese has melted.

  7. Before serving, top with remaining corn chips and sliced green onions.


How to freeze:  Cover tightly with aluminum foil and freeze up to 3 months. Thaw in the refrigerator overnight. If using glass baking dishes, place on the counter as the oven preheats. Remove the aluminum foil. Follow the above instructions to bake.
