Make a kid-friendly, parent-approved crunchy casserole that your big family can enjoy. This meaty meal will leave your loved ones full and satisfied for hours.
Ingredients
- 2.5 pounds lean ground beef
- 2 onions, diced
- ⅓ cup taco seasoning
- 1 cup water
- 2 (19 ounce) cans red enchilada sauce
- 2 (15 ounce) cans black beans, rinsed and drained
- 2 (9.25 ounce) bags Fritos corn chips
- 4 cups shredded fiesta blend cheese, divided
- ½ cup sliced green onions
Instructions

Preheat the oven to 350 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.

Divide one bag of corn chips between the two casserole dishes, spreading the corn chips across the bottom in an even layer. Top the corn chips with cheese, using about 1 cup in each casserole dish.

In a stock pot over medium-high heat, cook the ground beef and onion, crumbling as it browns. Drain well and return to the stock pot.

To the stock pot, add the taco seasoning, water, enchilada sauce, and black beans. Bring to a boil and reduce heat to medium-low. Cook for 15 to 20 minutes.

Pour the sauce over the corn chips and top with remaining cheese.

Bake for 20 minutes or until the edges are bubbling and the cheese has melted.

Before serving, top with remaining corn chips and sliced green onions.
How to freeze: Cover tightly with aluminum foil and freeze up to 3 months. Thaw in the refrigerator overnight. If using glass baking dishes, place on the counter as the oven preheats. Remove the aluminum foil. Follow the above instructions to bake.
