What do I need to make Big Family Slow Cooker Chipotle-Barbecue Meatballs?
To make this you’ll want to have:
- Frozen meatballs
- Barbecue Sauce
- Chipotle Peppers in Adobo Sauce
- Cherry Preserves
- Stir fry Vegetables
Preparing Big Family Slow Cooker Chipotle-Barbecue Meatballs
First prepare the slow cooker with a non-stick cooking spray. This makes clean-up a snap! Next, take the bag of frozen meatballs and place them in the bottom of the slow cooker. On top of those, pour the barbecue sauce, chopped chipotle peppers, cherry preserves, and the adobo sauce. Stir this all together, and cover. Cook on high for 2-3 hrs or on low for 4-5hrs.
Uncover the Slow Cooker Chipotle-Barbecue Meatballs and add the stirfry vegetables. Replace the cover and continue to cook for another 30 minutes or until the vegetables are tender. We like ours a little bit crisp. Once everything is cooked and combined, serve with a side of rice and add some fresh fruit.
How to Freeze Big Family Slow Cooker Chipotle-Barbecue Meatballs
Once you’ve prepared the Big Family Slow Cooker Chipotle-Barbecue Meatballs, you can place them in a freezer bag or a freezer-safe container before putting it in the freezer to keep it fresh. 1 (32 ounce) package frozen meatballs
2 (18.5 ounce) bottles barbecue sauce
1 (13 ounce) jar cherry preserves
3 chipotle peppers in adobo sauce, diced
1 tablespoon adobo sauce, from the can
1 package stir fry vegetables
Instructions
- Prepare the slow cooker liner with nonstick cooking spray.
- Place the meatballs, barbecue sauce, cherry preserves, chipotle peppers, and adobo sauce into the slow cooker. Stir to combine.
- Cover and cook on high for 2 to 3 hours or low for 4 to 5 hours.
- Stir in the vegetables and cook, covered, for an additional 30 minutes or until the vegetables are crisp-tender.
