You can make a large batch of these muffins in advance, store them in a container, and have them ready for your kids to grab and eat when they want a quick breakfast or have a craving for a chocolate snack. They taste amazingly fresh when coming out of the oven, but they are just as good at room temperature or when cold. You can easily trick your kids into eating zucchini when preparing this recipe, which is a bonus. They will never know that something they like so much is so good for them.
Ingredients Needed For the Zucchini Muffins
Before you begin making the Healthy Double Chocolate Zucchini Muffins, make sure you have these ingredients:
- Shredded Zucchini. You need to have shredded zucchini to add to your muffin mix. It is better to use shredded pieces than large chunks because it is less evident that these muffins contain zucchini.
- Old-Fashioned Oats. The old-fashioned oats create a thicker texture for the muffins while offering additional health benefits.
- Unsweetened Cocoa Powder. Adding unsweetened cocoa powder to the mix is a great way to get that chocolate taste you like most in your muffins.
- Chocolate Chips. Adding some chocolate chips will make these healthy muffins even more chocolatey.
- Greek Yogurt. Greek yogurt is a healthy additive that helps give the muffins a desirable consistency.
- Granulated Sugar. If you want your muffins to have that sweet touch, you will want to add some granulated sugar to them.
Besides these ingredients, be sure to have a banana, honey, eggs, vanilla extract, and all-purpose flour. You will have these muffins ready to eat with the right ingredients in no time.
How to Store Zucchini Muffins to Keep Them Fresh
The Chocolate Zucchini Muffins are excellent when fresh out the oven because they are hot and gooey. However, they taste good when kept fresh in a zipper sealed food storage container with the air sucked from it. You do not have to put the Healthy Double Chocolate Zucchini Muffins in the fridge, especially if you think your children will devour them before they have time to go bad, but you can put them in the refrigerator if you want to.
