Instant Pot Low Carb Jalapeno Popper Soup | Large Family Style
When you have a large family, this is something to be super proud of! Cooking dinners for a bunch of people is exciting, especially when it’s your family. I think one of the best parts about this recipe is that it’s in the Instant Pot, so you’re also going to save a bunch of time, which is always awesome!
If your kids don’t love jalapeno, you can always leave that part out and add it on for the people who do enjoy it. Some jalapenos aren’t as spicy as others, so do be careful which version you get. For example, buying fresh jalapeno may be spicier than a pickled jalapeno. I always taste test the recipes to make sure they aren’t too spicy! Some adults can’t even handle the spiciness of jalapenos, so it’s important to be mindful.
How Much Will This Jalapeno Soup Make?
Well, if your family is anything like my family, we eat a lot. Sometimes there are leftovers and sometimes not. With this meal though, you’re going to get a ton of yummy leftovers. I like to portion these out in containers the next day, so all we have to do is reheat and eat. I don’t know about you but the easier my life is with a lot of kids, the happier I am. If you have two Instant Pots, you can make double recipes and freeze one for later if you’d like.

If I were to describe this meal to anyone who wants to make it, I would say it’s very creamy. This meal is such a hit at our house, that we make it at least bi-weekly. With how busy we can be, you better believe that a good tasting soup like this is asked for often. Some people would describe this meal as also being very comforting. Perhaps when they think of comforting soups, this one is on their list? Either way, it’s yummy!
What to Serve With Popper Soup?

Your large family won’t get enough of this Instant Pot Jalapeno Popper Soup. It’ll become a family favorite in no time. This is also a low carb, gluten free, and sugar free recipe!
- 3 pounds chicken breast, cubed
- ½ cup (1 stick) butter
- 1 onion, diced
- 2 tablespoons taco seasoning blend
- 6 to 8 jalapenos, seeded, stems/membranes removed, and sliced
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 (8 ounce) package cream cheese, softened
- 1 cups shredded medium cheddar cheese
- 2 cups shredded monterey jack cheese
- 1 ½ cup heavy cream
Instructions for the Instant Pot
If not using taco seasoning blend, mix together dry seasonings together.
Set the pressure cooker to “saute” until hot. In small batches, brown the chicken and onions in butter. Set aside and keep warm.
When all of the chicken is browned, deglaze the bottom of the pressure cooker by adding the chicken broth and scraping the bottom with a wooden spoon.
Return the chicken and onions to the electric pressure cooker and add garlic, seasonings, and jalapeno. Stir together.
Close and set the valve to sealing. Set the pressure cooker to manual or pressure cook for 3 minutes. After the cycle, allow a natural release for at least 5 minutes.
Stir in the remaining ingredients until the cheese is melted and smooth.
For the slow cooker:
In a large skillet, brown the chicken on all sides before adding to the slow cooker.
Prepare the slow cooker crock with non-stick cooking spray. Add the chicken, onions, jalapenos, garlic, and dry seasoning.
Reduce the chicken broth to 3 ½ cups. Pour over chicken.
Cover and cook on low for 5 to 6 hours.
Prior to servings, stir in the cheeses and heavy whipping cream until melted and smooth.
If taco seasoning blend is not available, use these seasonings as a substitute:
1 tablespoon chili powder
2 teaspoons cumin
2 teaspoons salt
1 teaspoon black pepper
½ teaspoon dried oregano
½ teaspoon paprika
