Ingredients You’ll Need to Make the Casserole

When planning to make the Low Carb Artichoke, Olive, & Oregano Chicken Casserole, these are the ingredients you need to have:

  • Chicken Breast. Use boneless, skinless chicken breast and chop it into pieces for the recipe.
  • Artichoke Hearts. Drain your artichoke hearts before you use them.
  • Roasted Red Peppers. Drain the roasted red peppers before adding them to the casserole dish.
  • Kalamata Olives. Slice the olives in half before you use them.
  • Zucchini. Remove the ends of the zucchini, cut it in half, and then slice it into thin 1-inch pieces.

You’ll also need ingredients to make the dressing, including red wine vinegar, olive oil, salt, oregano leaves, garlic powder, and mozzarella cheese. You can buy shredded mozzarella cheese or use a cheese grater to shred a large mozzarella ball.

Should I use thin-sliced chicken breast for this casserole?

You don’t need to use thin-sliced chicken breast for this recipe. You’re going to chop the chicken breasts into cubed pieces, making them the perfect size for eating when enjoying this tasty meal.

What type of olive oil do I need to use to make the dressing?

You can use traditional olive oil, virgin olive oil, or extra virgin olive oil. It all depends on what you already have at home. No matter which type you choose, you can expect this dish to still taste good.

Does the chicken need to marinate in the dressing?

Yes, the chicken does need to sit in the dressing for a bit to soak in all the flavor. If you don’t have much time, let the chicken sit in the dressing for a minimum of 20 minutes. However, if you’re not planning to make the casserole until the next day, you can soak it in the dressing, place it in the fridge, and allow it to marinate overnight.

What if I don’t like olives?

If you don’t like olives, you don’t need to include them in the recipe. If you like the flavor they bring but aren’t a fan of the soft texture of olives, you can keep them in the recipe and then pick them out when you’re serving it to yourself.

How long does this casserole need to bake?

Description

Keep it simple by preparing a fresh Greek-style meal using this Big Family Low Carb Artichoke, Olive, & Oregano Chicken Casserole recipe. Made with fresh ingredients, it’s sure to become a family favorite!

 


Ingredients

  • 6 cups boneless, skinless chicken breast cut into bite-size pieces
  • 2 can artichoke hearts, drained
  • 2 cup roasted red peppers, drained
  • 2 cup kalamata olives, halved
  • 2 zucchini, ends removed, halved, and sliced in 1-inch pieces

For the dressing:

  • 1 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 teaspoon salt
  • 2 teaspoon garlic powder
  • 2 teaspoon dried oregano leaves
  • 2 cup shredded mozzarella cheese

 


Instructions

  1. Preheat the oven to 350 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.

  2. In a small bowl or jar, mix together the ingredients for the dressing.

  3. Place the chicken in a gallon zip-top freezer bag. Add half of the dressing and mix with the chicken. Let the chicken rest on the counter for 20 minutes or in the refrigerator up to overnight.

  4. Transfer the chicken to the casserole dish.

  5. Over the chicken, place the vegetables and olives. Pour the remaining dressing over the top. Toss the vegetables with the chicken to coat evenly.

  6. Top the casserole with mozzarella cheese.

  7. Bake for 45 minutes or until the chicken is done.
