Preparing your Mixed Berry Muffins
Gather your ingredients and preheat your oven to 375 degrees. Prepare a cupcake with liners then spritz the liner with non stick cooking spray so you get all the muffiny goodness when you peel off the liner later. Everyone is sad when half the muffin sticks to the paper.
In a medium mixing bowl, whisk together flour, salt, baking soda, and sugar. In a large mixing bowl, whisk together eggs, yogurt, vegetable oil, and vanilla. Slowly add in the dry ingredients until completely combined. Let batter rest for 5 minutes.
Toss berries in 1 tablespoon flour. Fold into resting mixture. Evenly scoop the batter into the 12 muffin cups. Top with turbinado sugar. Pop into oven for 18 to 20 minutes. Allow to rest in muffin pan for 5 minutes before removing to cooling rack.

These mixed berry muffins are a great breakfast option and a fabulous addition to freezer inventory for those hectic mornings.
- 1 ½ cups flour
- 2 teaspoons baking soda
- ¼ teaspoon salt
- ⅔ cup sugar
- 2 eggs
- ⅓ cup vegetable oil
- ⅔ cup greek yogurt
- 1 teaspoon vanilla
- 1 cup frozen mixed berries, cut into similarly sized pieces tossed in 1 tablespoon flour
- ½ cup turbinado sugar
Preheat oven to 375 degrees. Prepare a 12-cup muffin pan with cupcake liners. Spritz liners with non-stick cooking spray.
