Got a plethora of apples and need to make something delicious? These apple muffins are made all the more delicious with the addition of applesauce.
- 8 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 2 cups (4 sticks) butter, softened
- 4 cups sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 4 cups applesauce
- 2 cup walnuts, chopped (more for topping if desired)
Preheat the oven to 350 degrees.
Prepare two muffin tins with liners. Spritz liners with nonstick cooking spray.
Whisk together the flour, baking soda, and cinnamon.
With an electric mixer, beat together the butter and sugar until fluffy, about 3 minutes. Add the eggs and vanilla and mix just until blended.
Stir in the applesauce and walnuts (if desired.)
Scoop batter into muffin liners about ¾ full.
Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
These muffins freeze really well so I like to double or even triple the recipe for a quick breakfast on busy mornings.
