What is Palmini Pasta?
Palmini is a low carb pasta alternative made out of hearts of palm, which is the inner core of a bud from certain palm trees. When the heart of palm is trimmed and cooked, it resembles lasagna or linguini.
How Healthy is Palmini Pasta?
Palmini is a whole food pasta alternative that is also certified gluten-free, making it a good option for people who need to stay away from gluten. Because it’s low-calorie, and low-carb, Palmini is an easy way to save on your calorie count. Yes and Amen! Palmini pasta is also keto-friendly.
What Ingredients Do I Need?
- 3 (12 ounce) packages palmini lasagna noodles
- 3 pounds ground chuck
- Prepared pasta sauce (or homemade pasta sauce works great)
- Small curd cottage cheese
- Grated parmesan cheese
- 3 to 4 eggs
- Italian seasoning
- Garlic powder
- Shredded mozzarella cheese
How Do I Prepare Large Family Palmini Lasagna?
While your oven is preheating, and after you’ve prepared your two pans, go ahead and place your large skillet on the stove. Pour in the pasta sauce and add your browned chuck, and begin to simmer. While the meat sauce is simmering, grab a medium bowl and combine the cottage cheese, eggs, spices, and parmesan cheese, stirring them well.
By this time your meat sauce is ready. Now you’ll begin by adding a layer of meat sauce to your pans. Next follow up with a layer of the Palmini noodles. Then add your cottage cheese mixture over the noodles (be sure to spread evenly!)
You’ll add the mozzarella cheese over the cottage cheese layer. Then top with the meat sauce, starting your layering process all over again.
Repeat these layers as desired, making certain to end with your remaining meat sauce then topping with your mozzarella cheese.
Pop your baking dishes into your oven for about 30 minutes, or until the cheese is all melted and bubbly.
Can I Freeze My Large Family Palmini Lasagna?
Yes and Amen! Once you’ve prepared your Palmini Lasagna, you can wrap it in aluminum foil and plastic wrap or put a freezer-safe lid on it before putting it in the freezer to keep it fresh. Don’t forget to add your label! You can leave the meal in the freezer for a minimum of 3 months before thawing it and reheating. You can also assemble smaller portions into freezer-safe bags and store them that way to save space. To thaw, follow the recipe card below (it’s printable!) and remember to always heat your casserole to a minimum internal temperature of 165 degrees.
