Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 4 large eggs, room temperature
  • 2 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground allspice
  • 4 medium ripe bananas, mashed (about 1 1/2 cups)
  • 2 cup whole-berry cranberry sauce

For the topping

  • 1 cup packed brown sugar
  • 1 cup chopped pecans
  • 4 tablespoons all-purpose flour
  • 4 tablespoons butter, melted

Instructions

  1. Preheat the oven to 350 degrees. Prepare a 9 x 13 inches baking pan with nonstick cooking spray.
  2. Whisk together the dry ingredients: flour, baking powder, ground cinnamon, salt, ground and allspice.
  3. In a large mixing bowl, cream the butter and sugar until light and fluffy, for 5 to 7 minutes.
  4. Beat in eggs and vanilla. Then, add the bananas and mix until combined.
  5. Add the dry ingredients to the cream mixture and beat just until combined.
  6. Spread evenly into the prepared baking pan and top with dollops of cranberry sauce.
  7. In a small bowl, combine the brown sugar, chopped pecans, and flour. Stir in the butter.
  8. Sprinkle over the top of the cranberry sauce.
  9. Bake for 45 to 50 minutes. Cool in the pan on a wire rack. Slice into squares and serve warm.
