What do I need to make the Large Family Chicken Jerk?
This meal is super simple. Grab two sheet pans and aluminum foil. Then, you’ll need the following ingredients:
- 1 family pack chicken thighs – I would recomend boneless thighs so they cook faster and more evenly.
- 2 (12.25 ounce) bottle Caribbean-style jerk marinade– This sweet and tangy marinade makes the recipe!
- Salt and black pepper, to taste– season to your likings
- 4 to 5 pounds sweet potatoes, scrubbed and cut into 1-inch pieces– The subtle flavor allows room for the chicken and marinate to be the star of this dish.
- 1 (32 ounces) fresh broccoli florets– Broccoli adds just the right amount of crispness to this dish.
How to make the Large Family Chicken Jerk
After you’ve collected all the ingredients, you’ll want to pre-heat the oven to 400 degrees. Lining the sheet pans with aluminum foil and spraying it with non-stick spray keeps things easy to clean up which saves time. No more scrubbing!
In a bowl, pour one bottle of the marinade over the chicken and toss to coat completely. I tend to buy a marinade that does not have to sit for a while to season the meat. I have seen some that suggest/require 30 minutes or more to marinate. If I think of it earlier in the day then I will place it in the fridge. Otherwise, I usually just add it right at that moment and do not let it marinate. It usually comes out just fine, but you should do whatever you are comfortable with. Arrange the chicken on the baking sheets, leaving space for the vegetables between the pieces. Then, toss the cut sweet potatoes in a bowl and add half of the remaining marinade.
Arrange the sweet potatoes around the chicken and bake the sheets for 35 minutes.
While they are cooking, toss the broccoli in the remaining marinade in a bowl. I like to use the same bowl I used for the potatoes to save on dishes.
At the end of the 35 minutes, carefully remove the sheet pans from the oven and add the broccoli. Return it to the oven and bake for an additional 10 to 15 minutes or until the chicken is cooked through and an internal temperature of 165 degrees is reached.
What can I make with the Sheet Pan Chicken Jerk?
If you want to extend this meal, you can add brown rice in the instant pot or cauliflower rice and serve the meal over rice. I find this to be a pretty complete meal so adding a large family dessert, like Slow Cooker Banana Heath Bread Pudding if you want something easy in the slow cooker, or Instant Pot Peanut Butter Cheesecake if you are looking for something low carb, or Double Chocolate Banana Bread would make a great side or dessert.

Instructions

Preheat the oven to 400 degrees. Prepare two large baking sheets with aluminum foil and grease with olive oil or spray with nonstick cooking spray.

In a bowl, pour one bottle of the marinade over the chicken and toss to coat completely. Arrange the chicken on the baking sheets, leaving space for the vegetables between the pieces.

In a large bowl, toss the sweet potatoes in half of the remaining marinade. Then arrange the sweet potatoes around the chicken.

Bake the chicken for 35 minutes.

Meanwhile, toss the broccoli in the remaining marinade.

Carefully remove the baking sheets from the oven and add the broccoli to the baking sheets.
