Here is a flavorful chicken jerk recipe that feeds a large family.
1 family pack chicken thighs
2 (12.25 ounce) bottle caribbean-style jerk marinade
Salt and black pepper, to taste
4 to 5 pounds sweet potatoes, scrubbed and cut into 1-inch pieces
1 (32 ounce) fresh broccoli florets
Preheat the oven to 400 degrees. Prepare two large baking sheets with aluminum foil and grease with olive oil or spray with nonstick cooking spray.
In a bowl, pour one bottle of the marinade over the chicken and toss to coat completely. Arrange the chicken on the baking sheets, leaving space for the vegetables between the pieces.
In a large bowl, toss the sweet potatoes in half of the remaining marinade. Then arrange the sweet potatoes around the chicken.
Bake the chicken for 35 minutes.
Meanwhile, toss the broccoli in the remaining marinade.
Carefully remove the baking sheets from the oven and add the broccoli to the baking sheets.
Return to the oven and bake for an additional 10 to 15 minutes or until the chicken is cooked through and an internal temperature of 165 degrees is reached.
