  • Cooked Chicken. Cook your chicken in advance and chop it into cubes to use it to prepare this casserole dish. Make a chicken in the instant pot and use leftovers for this meal.
  • Marinara Sauce. Use your favorite brand of marinara sauce for the recipe. Here is our pasta sauce to use, too!
  • Grated Parmesan Cheese. You cannot have parmesan chicken without the parmesan cheese. Use plenty of it.
  • Shredded Mozzarella. Add shredded mozzarella to make the dish cheesier. The mozzarella melts perfectly over the chicken.
  • Almond Flour. Use almond flour instead of traditional flour when coating your cubed pieces of chicken.
  • Italian Seasoning. The Italian seasoning is what gives the dish even more of an authentic taste.

With such simple ingredients, it is possible to make this delicious casserole.

What to Do When You Want to Save the Chicken Casserole For Later

If you want to prep the dish in advance and eat it some other time, you can do that with no problem. You would simply need to put your casserole in the fridge or freezer, depending on when you plan to eat it.

Description

Savor the flavor of parmesan chicken without all the excess carbs with this Large Family Low Carb Parmesan Chicken Casserole recipe. The flavorful dish contains fresh chicken breast with a tasty marinara sauce and loads of delicious cheese.

 


Ingredients

  • 12 cups cooked chicken, cubed
  • 2 (24 ounce) jar marinara sauce, divided
  • 3 cups grated parmesan cheese, divided
  • 3 cups shredded mozzarella cheese
  • 1 cup almond flour
  • 1 teaspoon italian seasoning

Instructions

  1. Preheat oven to 350 degrees. Prepare two (9×13) casserole dishes with nonstick cooking spray.

  2. In a small bowl, mix together 1 cup parmesan, almond flour, and italian seasoning. Set aside.

  3. In a large bowl, combine chicken, the content of one jar marinara, 2 cups parmesan, and 2 cups mozzarella cheese. Divide evenly between the two casserole dishes and spread evenly.

  4. Divide the remaining jar of marinara between the two casseroles and pour over the top of each. 

  5. Add the remaining mozzarella in a layer over the marinara and then top with the almond flour mixture.

  6. Bake for 30 minutes or until the cheese is melted and bubbling.

 


Notes

Note: If you prefer pork rinds as a crust, substitute 2 cups crushed pork rinds for the combination of almond flour and 1 cup parmesan cheese.
