Happy Homemade Sunshine Cupcakes
The great part about this dessert recipe is that you use already made cupcakes. Now I know you have a stash of prepared cupcakes in your freezer?
Yep, I sure do. If you don’t, bake some with whatever box mix you have on hand. As a matter of fact, whip up some extra to feed your freezer.
Burrow through your cabinets and see if you have some canned frosting in there somewhere. If not, no worries. Hop over to this amazing buttercream frosting recipe from Belle of the Kitchen. Super easy and super yummy. It’s a winner in my book. Tint 2-3 cups of whatever icing you find a nice sunshiny yellow.
Glob your frosting into a piping bag fit with a large open star tip ( I like Wilton 1M Open Star Piping Tip). Pipe frosting in a circular motion starting from the inside all the way to the edges. Press Bugles firmly along the edges to represent the sun’s rays.
