- Dried Red Beans. Sort and rinse the beans before you use them. If you like beans, try my Navy Bean and Ham recipe!
- Ham Pieces. Chop ham into small pieces. Make sure you have about one pound of ham to use. You can use leftover ham from making ham in the instant pot.
- Smoked Sausage. Cut your sausage in half and slice it down. You can use any smoked sausage you prefer, such as turkey smoked sausage or kielbasa. I also have a Smoked Sausage and Broccoli Casserole.
- Diced Tomatoes. Give your dish the perfect flavor and texture with diced tomatoes.
- Bell Pepper. Chop your bell pepper into pieces and use at least a cup of it for this recipe.
- Garlic. Use two cloves of garlic in this recipe to enhance the flavor of your rice.
- Cooked Rice. You can use any type of rice you would like, such as long grain, short grain, or Jasmine rice. Learn how to make brown rice in the instant pot.

Ingredients
- 1 pound dried red beans, sorted and rinsed
- 1 (28 oz) can diced tomatoes
- 1 pound ham pieces
- 1 pound smoked sausage, cut in half and sliced (turkey, kielbasa or andouille)
- 1 cup chopped celery
- 1 cup chopped onion
- 1 cup chopped bell pepper
- 2 bay leaves
- 2 cloves garlic, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon ground white pepper
- ½ teaspoon ground red (cayenne) pepper
- Water
- Rice, cooked- for serving
Instructions

Place all ingredients in the slow cooker and stir to combine.

Cover and cook on low for 6 to 8 hours or until the beans are tender.

Remove the bay leaves. Serve over rice.
