How do I prepare Large Family Low Carb Chocolate Pie ?
For this recipe, you’ll need to use two 9 inch pie pans. I’ve had some fun lately with finding vintage pie pans at local thrift stores. Using your food processor, blend together the almond flour, pecans, and powdered erythritol. You’ll need to pulse until the pecans are finely ground. Then throw in your butter and pulse until the mixture comes together. Once the pie dough is done, divide it into two equal parts and press each into the bottom of a pie dish. You’ll need to make certain to press evenly into the pie pan to create an even layer. Go ahead and bake these for 20 minutes and then cool them completely.
To prepare the chocolate layer you’ll need a cold mixing bowl. You can easily chill your bowl by placing it under cold water, shake dry, then place in the freezer for a few minutes. Whisk your heavy cream in the chilled bowl until stiff peaks form then set in your fridge until needed. In your large bowl beat the cream cheese until smooth. Next you’ll add your vanilla, sweetener, cocoa powder, and salt into the cream cheese. Continue mixing this until completely combined.
Taking your chilled whipped cream, begin folding it into the large bowl of cream cheese mixture. Do this in small amounts, and make certain to incorporate fully until all of the whipped cream is incorporated. Once it’s all combined well, gently fill each pie crust with your chocolate fluff layer by carefully adding in spoonfuls. Make certain to divide evenly! Running a spoon over the top to smooth it all down, prepares the chocolate layer for the whipped topping.
For your whipped topping layer you’ll need another cold mixing bowl. Go ahead and whisk the heavy cream together with the powdered sweetener until stiff peaks form. Top each of the pies with the sweetened whipped topping. Grate sugar free chocolate over the top.
Then simply cover and refrigerate for several hours or overnight prior to serving.
