How to Make Large Family Low Carb Sandwich Bread
Start by preparing your loaf pans and preheating your oven. For this recipe, everything is whisked together in your blender. If you have a 3 qt blender, great! If you don’t, then simply make this recipe in two smaller batches. Win, win!
In a large bowl whisk together your almond flour, coconut flour, baking soda, and salt. Set the bowl aside for later.
Next, place the egg yolks, coconut oil, water, and apple cider vinegar into your blender. Process this mix for about 5 seconds. You’ll need to let the mixture rest for one minute before adding the egg whites. Add the egg whites and then turn on the blender again and process until it turns frothy. This usually takes about 15 seconds.
Now you’ll add the dry ingredients and run the blender for 10 to 15 seconds or until the batter is smooth. Next, carefully transfer the batter to your prepared pans and smooth it all into an even layer. Then transfer carefully into the oven and bake for 50-75 minutes depending on the size of your loaf pan. You’ll know it’s done when you can insert a toothpick into the center and it comes out clean.
Remove from oven and allow the bread to cool for 10 to 15 minutes in the pan before removing and cooling completely on a wire rack. Once it’s cooled, you can store it in your fridge wrapped in parchment paper or plastic wrap to keep the moisture locked inside.
