Ingredients

  • ¼ cup olive oil, divided
  • 4 pounds smoked sausage, halved through the length and cut into slices
  • 1 onion, cut into 1 inch pieces
  • 2 red bell peppers, seeded and cut into 1 inch pieces
  • 2 green bell pepper, seeded and cut into 1 inch pieces
  • 1 yellow bell pepper, seeded and cut into 1 inch pieces
  • 1 (32 ounce) package fresh green beans, ends trimmed and halved
  • 1 (28 ounce) can petite diced tomatoes
  • 6 cloves garlic, minced
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

 


Instructions

  1. Prepare two 9×13 casserole dishes with nonstick cooking spray.

  2. In a large skillet over medium heat, add 1 tablespoon of olive oil and brown the sausage in batches.

  3. Meanwhile, toss together the onion, bell peppers, and green beans. Drizzle with several tablespoons of olive oil and season with salt and pepper. Divide evenly between the two casserole dishes.

  4. Divide the sausage between the two casserole dishes and mix in with vegetables.

  5. In a medium bowl, stir together diced tomatoes, garlic, basil, oregano, salt and pepper. Pour over the casseroles.

  6. Cover the casserole dishes with aluminum foil and freeze.

  7. When ready to cook, preheat the oven to 350 degrees. Bake the casseroles for 1 hour, covered.
