This dairy-free meal provides plenty of vitamins, protein, and nutrients to promote overall health and wellbeing for you and your large family. Because the Big Family Olive and Tomato Seasoned Chicken Sheet Pan Dinner Recipe is dairy free, even those with certain diet restrictions can rest easy and enjoy a great meal. Most importantly, it’s an easy meal to make! It is the kind of meal you can put together in minutes,  pop in the oven, and bake until ready. The chicken is is perfectly paired with olives, tomatoes, and other vegetables and then they are all baked together with a perfect blending of seasonings to make this a family classic.

Am I Able to Freeze Olive and Tomato Seasoned Chicken Recipe?

Yes and Amen! Olives actually freeze remarkably well. If you want to cook now and freeze portions for later, remember to make certain that you’ve divided up the different vegetables evenly into your portions. This helps to ensure great flavor later on when you prepare it from the freezer. I’ve added complete freezer instructions in the recipe card below- it’s even printable to help you make things easier.

What’s needed

  • 1 family pack chicken thighs
  • Balsamic vinegar
  • Dried tarragon
  • Dried oregano
  • Paprika
  • 2 Lemons, juiced
  • Golden potatoes
  • Red onion
  • Yellow bell pepper
  • Zucchini (2-3)
  • Mushrooms
  • Grape tomatoes
  • Pitted kalamata olives
  • Crumbled feta cheese
  • Freshly chopped parsley, for garnish

To Make Your Olive and Tomato Seasoned Chicken Recipe

To begin you’ll need to both pre-warm your oven and prepare your large baking sheet with parchment paper that’s been lightly oiled. If you don’t have a large sheet pan, you can evenly divide this meal between two smaller sheet pans.

In a small bowl mix together your balsamic vinegar, tarragon, oregano, paprika, lemon juice, salt, and black pepper. Set aside about ½ cup of the sauce. Taking your remaining sauce, pour it over the chicken and toss to coat completely. Next arrange the chicken on the baking sheet. You’ll want to make certain that you leave enough space for the vegetables between the pieces.

Next take your large bowl to use for all of the vegetables. Set your tomatoes aside for this step! Toss the remaining veggies into the bowl and mix together, drizzling with the reserved sauce. After that step, arrange the vegetables around each of the pieces of chicken on your baking sheet.

Place your baking sheet into the oven and cook for about 40 min. Then you’ll remove pan from the oven and place the tomatoes and olives on top of your meal, returning to the oven for an additional 10 minutes. You’ll need to make certain that your chicken is cooked thoroughly.

Top with your feta cheese and your parsley for garnish! It’s that simple!

Make a tasty large family meal together in one pan with this Big Family Olive and Tomato Seasoned Chicken Sheet Pan Dinner | Dairy-Free OptionIt is the perfect dinner to serve when you want something simple, healthy, delicious, and dairy-free. 


Ingredients

1 family pack chicken thighs (aprox. 5 lbs)

¼ cup balsamic vinegar

2 teaspoons dried tarragon

2 teaspoons dried oregano

2 teaspoons paprika

Salt and black pepper, to taste

2 lemons, juiced

3 pounds golden potatoes, scrubbed and cut into 1-inch pieces

1 red onion, cut into pieces

1 yellow bell pepper, seeded and cut into 1-inch pieces

2 to 3 zucchini, halved and sliced thick

1 (8 ounce) package mushrooms, cleaned

1 pint grape tomatoes

1 cup pitted kalamata olives

1 cup crumbled feta cheese

Freshly chopped parsley, for garnish

 


Instructions

 

  1. Preheat the oven to 400 degrees. Prepare two large baking sheets with aluminum foil and grease with olive oil or spray with nonstick cooking spray.

  2. In a bowl, combine the balsamic vinegar, tarragon, oregano, paprika, lemon juice, salt, and black pepper. Set aside about ½ cup of the sauce. Pour the remaining sauce over the chicken and toss to coat completely. Arrange the chicken on the baking sheets, leaving space for the vegetables between the pieces..

  3. In a large bowl, toss all of the vegetables together EXCEPT the tomatoes and olives and drizzle with the reserved sauce. Toss to coat. Then arrange the vegetables around the chicken.

  4. Bake the chicken for 40 minutes. 

  5. Carefully remove the baking sheets from the oven and top with tomatoes and olives.

  6. Return to the oven and bake for an additional 10 minutes or until the chicken is cooked through and an internal temperature of 165 degrees is reached.

  7. Top with feta cheese and fresh parsley to garnish, if desired.


Notes

Freezer Instructions:
Once you’ve prepared the meal, you can wrap it in aluminum foil and plastic wrap or put a freezer-safe lid on it before putting it in the freezer to keep it fresh. Don’t forget to add your label! You can leave the meal in the freezer for a at least 3 months before reheating. You can also assemble smaller portions into freezer-safe bags and store them that way to save space. 
To thaw, take your meal from the freezer to the refrigerator the day before. When you’re ready to reheat, just follow the baking directions above!
***Casseroles should be heated to a minimum internal temperature of 165 degrees.***
