What could be better than sesame ginger marinade on amazing organic, free range, boneless chicken breasts? I got four packs of almost a pound but under two pounds of this delicious chicken for all the people I have to feed. It came up to six pounds when I opened them all up and dropped then in the bowl. Pour the bottle of marinade in, cover the bowl and let those babies swim in it for 6-8 hours. Overnight would be ideal but sometimes a mama has to make modifications or her family won’t eat! If my people get a healthy hot meal for dinner then I call that a #momwin.
After a long day out and a nap for this large family mama, it’s time to start the chicken. First, we start the organic sprouted toasted coconut rice that we will have as our side dish. The Stewart family will have loads of yumminess on their plate tonight! Spray your sheet pans and divide the chicken breasts between them. Keep the marinade in the bowl. We will use that later.
Roasted brussel sprouts work well with chicken because they take about the same amount of time to cook. Wash your sprouts, toss them with avocado oil, then add them to the sheet pan. Remember the leftover marinade in the bowl? Pour that over the chicken and brussel sprouts on the sheet pans for extra yumminess. Pop in a 400 degree oven for 30 – 35 minutes or until the internal temperature of the chicken is 165 degrees.

A tasty sheet pan recipe involving chicken breasts with sesame ginger sauce from and roasted brussel sprouts. We added organic sprouted toasted coconut rice for a family favorite!
Ingredients
- 6 lbs boneless chicken breasts
- 1 bottle sesame ginger marinade
- 2 lbs brussel sprouts
Instructions
- Put all the chicken in a large bowl.
- Pour the whole bottle of sesame ginger marinade into the bowl
- Cover and let marinade preferably overnight but at least 5 – 8 hours
- Spray sheet pans
- Add chicken breasts to sheet pans and reserve the marinade for later
- Wash brussel sprouts, toss with oil, and add to sheet pan with chicken
- Pour reserved marinade on top of chicken and brussel sprouts
- Place in 400 degree oven for 30- 35 minutes flipping chicken over halfway through
Notes
Make sure chicken reaches an internal temp of 165 degrees.
