Have you ever thought of making meatloaf patties and doing a sheet pan dinner? This large family mama managed a few extra brain cells and came up with turkey meatloaves with sweet potatoes and carrots sheet pan dinner!

For these meatloaves, you can use any kind of meat you have on hand. Ground beef, ground turkey, ground lamb, you name it. I am using ground turkey for my large family since that’s what I have in the freezer.
I often use oatmeal in my meatloaf but I happened to find some Italian style bread crumbs in my pantry that were still well within the expiration date. We will use them instead. If you need a gluten free version, you can buzz up some crackers in a food processor or put them in a Ziploc bag and let the kids beat them with a wooden spoon until they are finely crushed. Of course, you could use gluten free oats but where’s the fun in that?

Chop your onion and put it in a bowl with the bread crumbs, eggs, and the ground meat. Mix it all together. My hands are my preferred mixing utensils for meatloaf because you really have to mix it up. This is the point where you remember the ketchup, garlic powder, and basil so you add them too. You can chalk it up to having a Jammerill moment. It happens more often than this large family mama cares to admit.

Form into patties and put on your greased sheet pan. Chop up some sweet potatoes and baby carrots, toss them in oil and add them too. Pop in the oven at 425 degrees for 20 minutes. You can either move the pans halfway through or just move the bottom pan up and leave in for an extra 10 mins. Drizzle some ketchup on top of the patties, serve, and enjoy!

Turkey Meatloaves with Sweet Potatoes & Carrots Sheet Pan Dinner
Ingredients
- 4 lbs ground turkey
- 1 onion
- 4 eggs
- 2 cups bread crumbs or old fashioned oatmeal
- 1 cup ketchup
- a shake or two of garlic powder
- basil or parsley
- 4-5 sweet potatoes
- baby carrots
- oil for tossing
Instructions
- Chop onion into small pieces
- Add onion to bowl then crack eggs into bowl
- Add breadcrumbs, meat, garlic powder, ketchup, and basil
- Mix well.
- Form into patties or whatever form you desire and place on greased sheet pan
- Chop sweet potatoes and carrots
- Toss with oil
- Add to sheet pan
- Bake in 425 degree oven for 20 minutes
- Drizzle ketchup on meatloaves before serving.
