The best part of this soup is it’s different every time. Use what you have on hand. Add rice or noodles if you want. I like to serve with garlic bread and fruit. You can serve it just as is if that works for you. This fantastic budget meal served my large family for about 3 dinners – yay!

What do I need to make Healthy & Cheap Stock Pot Soup?
The answer is simple!! Anything!! When I made this, I used whatever fresh vegetables I had on hand from my Misfits Market box and a whole organic turkey! I also added some barley and lentils and you could add rice or noodles, too!
One Whole Chicken – I used organic. We like to use a local farm for our chickens typically, but this was store-bought.
Fresh Vegetables – I used yellow squash, zucchini, crushed tomatoes, celery, cabbage, and dried green peas.
Seasonings – Whatever your family likes! I used garlic and onion powder, Italian seasoning, basil, salt, pepper, minced garlic, and bay leaves
Add ins – To give this soup a little extra something, I added lentils and barley! You could also add rice or noodles!!

How to Make Healthy & Cheap Stock Pot Soup
First, you’ll need to prepare your whole chicken. If you are using a rotisserie chicken, you may use the same directions but place the chicken on the Instant Pot trivet rather than placing straight in the pot. Remove all the giblets and other “extras” that come in the chicken. You’ll want to save these for your bone broth!!
Then, cook your whole chicken in the Instant Pot for 60 min on high. You may add some butter and seasonings to add extra flavor to your chicken! After your chicken cooks, let it cool before removing the meat from the bones. Keep the broth for the soup and keep bones and other leftovers if you’re planning to make the bone broth.
To a large stock pot, add the meat and all the vegetables, seasonings, and other add-ins you’d like with your chicken broth and 10-12 cups of water. Cook on low-medium for about 2 hours.
Your house will be filled with delicious smells and your family will enjoy this wonderful soup that will last you several meals or can be frozen for later!!

Description

Ingredients
1 whole organic chicken, fully cooked and removed from bone
4 yellow squash, sliced
4 zucchini, sliced
3 28 oz cans of crushed tomatoes (or tomato puree or diced tomatoes)
1 head celery
2 heads cabbage
16 oz dried green peas
16 oz lentils
8-16 oz barley
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp Italian seasoning
1 tbsp basil
1 tsp salt
1 tsp pepper
2 heaping tbsp minced garlic
4 bay leaves
10-12 cups water
2 quarts of chicken broth (leftover from cooking whole chicken)
Instructions
1. Cook whole organic chicken in Instant Pot (Instructions here: https://largefamilytable.com/how-to-cook-a-whole-frozen-chicken-in-the-instant-pot/)
2. Separate meat from bones and add to large stock pot
3. Add all vegetables, spices, and herbs into the stock pot
4. Add the liquid stock from cooking chicken in the Instant Pot
5. Add 10-12 cups of water
6. Cook on low-medium for about two hours, stirring often.
Notes
You may add 1-2 lbs of rice or noodles if desired.
